RED DETOX SOUP
INGREDIENTS
- 1 tsp coconut oil
- 4 carrots, peeled and roughly chopped (about 2 cups)
- 2 stalks celery (about 1 cup)
- 1 small red onion, roughly chopped (about 1 cup)
- 4 large tomatoes, peeled and deseeded (about 2 cups)
- 3 large garlic cloves, roughly chopped
- 1 Tbsp ginger
- 1 Tbsp turmeric
- ½ tsp black pepper
- Extra-virgin olive oil, for drizzling
-Salt to taste
In a large saucepan, heat coconut oil over medium heat.
Add carrots and celery. Cook for a few minutes before adding onion and tomatoes.
Cook, stirring frequently until carrots are fully cooked and onions are translucent. Incorporate garlic and ginger to the pot and cook until fragrant.
Move to a blender and purée with turmeric and red pepper.Serve hot with a drizzle of olive oil.
For a Snack, Tracy recommends dark chocolate or a GoMacro Bar.
And remember to drink plenty of water
Tracy also has one cup of coffee per day with oat milk.
