So timely, I am actually in the middle of doing this reorganization in my own kitchen as well! I cook from scratch a lot but have a very small kitchen and it wasn't functioning well. Some new containers and proper labelling of things is helping. Also I have done some cupboard switcheroo's that have helped tremendously, just using the space I have more efficiently. Thji is something we need to all do at least once a year.our life. Sometimes some weird little ingredient gets stuck in the back of the cupboard cause you tried it once and realized it is not going to be part of your life. This can be a learning lesson and help refine our choices going forward.

I hate to cook, so I don't keep a lot of one-offs on hand. Nor do I have a lot of spices. Right now, our counters are full of fresh yellow tomatoes & peppers from our garden. Later, I'm going to be prepping them for the freezer to use them this winter for soups, chili & fajitas. 😊

@@stefshady85 It has been on my list to try making as well… and teff flour has been in my Amazon cart for months bc of it. 😂😂 I’ve eaten it a few times and it’s delicious! I also remember seeing this recipe: www.forksoverknives.com/recipes/vegan-breakfast/gluten-free-banana-teff-bread/ but FOK recipes are hit or miss for me so not sure if this one’s any good!

When you’ve gone through the shortages of the last few years plus live out in the sticks, keeping an over-full pantry is a dangerous habit! 😂 What’s helped is getting ready to sell the house and emptying out as much as possible. For the last few months I’ve had to meal plan like a demon, only buying fresh produce and the very few things needed to complete a meal. We’re almost to the point of having those weird combo plates with what’s left! I’m not fully vegan yet, apologies, but had to share last night’s all-brown junky freezer dinner: the last tater tots, onion rings, fried shrimp and two chicken strips. Luckily we had lots of oats and produce the rest of the day! 😬

I agree, spelt or buckwheat would make great pancakes! I’ve done buckwheat crepes before and they came out great. These flours can also be used as alternatives to all purpose flour in some recipes! Let us know if you try some pancakes Terry. 😃

Any tips for getting the smell off lids of jars you repurpose? I find no matter what I do, I will think I have gotten the smell out and then, no the garlic/pickle smell is there.

Yes! I pour vinegar into the lid and let it sit. Then pop it into the dishwasher. Gets rid of the color stain and smell!

@@LetsEatPlants it really does and I'm better at putting away things before the counters are too cluttered because I love how nice it looks and feels. I don't have a walk in pantry. Just have a dresser and a bookshelf I keep things on and a little shelf. You can get creative if you really think of the possibilities

@@LetsEatPlants you got this. The skys the limit. My 523 sq ft house was flooded twice...once 2 ft up the wall. Husband and I are simple ppl and just made sure there was no mold in the walls and continued living there. We have become very creative and resourceful as a result of it. Ahhh that was me 2 years ago.. I finally got rid of it. 😂😂🙈🙈 Coconut flour is a tricky one because it soaks up sooo much liquid. I do remember it pairs well with another flour (I think almond?) for balance. I think I made some tortillas with mine?? I hope someone here can offer some better suggestions! 🙏🏻🙏🏻

Ooooh many great recipes for jackfruit! You could turning it into “meat” and use it for tacos, enchiladas, BBQ sliders, pizza/baked potato topping, or in a curry. Check out these ideas here: www.staceyhomemaker.com/jackfruit-recipes/ 😃😃 It’s pretty flavorless other than there’s kind of a brine-y flavor.. but once you add seasonings you just taste those! 😊

You’d better check if that jackfruit is ripe or unripe. If it’s unripe, simply drain & rinse then shred it like chicken. Don’t toss the seeds if u find them in there. Peel the seed’s tough skin and eat it. It’s tasty. After u shred your unripe jackfruit, simply mix your fave BBQ sauce and eat like pulled pork/chicken. If it is ripe, you can dice it and enjoy it w/ chopped avocado in coconut milk on ice. It’s 1 of Indonesian dessert.

Shred it, add salsa or teriyaki sauce to it (my favorite is the pepita salsa from Trader Joe’s) sautée some bell peppers and onions then add them to the jackfruit sauce mixture and serve on rice or in tacos

I've been trying to use up pantry items too.. Most of them are from early covid days that are nearing expiry or already past... It's definitely been a challenge.. 😩

@@yonniehan Coconut is flour is a tricky one!! I had the same problem (bought it and couldn’t remember why and then never found good recipes for it. 😂🙈) but finally got rid of it a couple years ago. I think I made tortillas with it? It soaks up a lot of excess liquid so maybe that’s why the cookies were crumbly? Not my favorite flour to work with.. but hopefully someone will reply here with some better ideas! 🤩🙏🏻🙏🏻

I had the same thing with amaranth, it wasn’t my favourite flavour at all. To use it up I added just a spoonful to soups or stews or when cooking rice. I didn't taste it but didn't waste it.

Want an asian dessert recipe? Out here we mix it w/ coconut milk until thick then use it to wrap around banana. After that you can wrap the whole thing w/ parchment or banana leaf & steam the whole things over high heat for 10min. Another idea is use it to thicken your gravy. That’s what Mary McDougall use it for.

I bought a bag of potato starch, it looks like icing sugar.I. was positive I needed it for something but now I don't remember. My freezer needs to be inventoried, I am kind of afraid.

Hi, I find that potato starch is a good swap for cornstarch in a lot of recipes. IE I make a vegan "pudding" and I can use either potato or corn starch for it. Best to ya!

Great answers from Mimishimaineko! I would say cornbread too… but cornmeal was actually one of the things I found in my cupboard as well… so clearly I did the same as you on this ingredient. 🤣🤣 I tried some cornmeal waffles that were ok, but I’m going to look for some other recipes as well. 😄

Polenta, I use soy milk or all water in recipes that call for dairy. Sometimes add nutritional yeast at the end of cooking. Great served with roasted veggies.

@@LetsEatPlants The edible stuff sorry :) I bought it for a recipe a long time ago and I can't find the recipe now. I also don't have a double boiler and can't find a good milk free chocolate recipe. I do have Cacao powder so if anyone knows of a good recipe that doesn't require a double boiler I'm all ears.

@@trinabenyi8791 Omg too funny.. I was asking because I bought the same thing!! I thought I was going to make chocolate or experiment with using it as a fat source instead of oil. 😆😆🙈 So actually for chocolate, you don't need an official double boiler! You can just use a sauce pan with water and over that place a glass bowl (just google how to do it with a saucepan) and that gives the same effect! I occasionally melt chocolate that way. 😊 Here's a recipe that also says you can just use a regular saucepan, no need to do a makeshift double boiler: www.asaucykitchen.com/homemade-chocolate-with-cocoa-butter/

Lol. Around here I am known as “iron stomach“, king of expired products. Or rather, king of eating expired products… I never have pantry items sitting on the counter in hopes of using them. I don’t have enough counter space because it’s all taken up with kitchen gadgets. I really need someone to help me redesign/organize my counter space so I can get rid of the coffee maker and make space for a stand mixer. This is also to say I don’t have any cupboard space to put the gadgets I’m not currently using.

Maybe you could get a rack on wheel like those serving trolleys? That’s what i use to put away appliances i don’t use every day. 🤚🏻high five to you as i too often eat expired food. In fact i often buy nearly expired food like cereal & plant based milk and use it in my baking. Beans & dried fruits too. My logic is they’re dry, how can they go bad?😂😂😂😂

@@stevefield6972 i usually just tuck it under my sink (it’s just an empty space) or when too lazy to tuck it, i’ll just leave it up against the wall next to my ironing board. I don’t know how cramp your kitchen/dining area is but that’s how i kept mine.

As a side dish you can toast them and make a pilaf with onions, mushrooms or veggies of your choice. If you google kasha you will see quantities. Just leave out the egg for vegan option. I always make it with onions and mushrooms but was thinking frozen peas would be a good addition. Also good with cooked bowtie noodles added at the end.

If you soak buckwheat groats overnight, rinse and drain then blend with water to make a pancake batter. These make great pancakes or wraps, they stay together very well.

Capers are a traditional bagel topping. Or maybe you can swap a vegan "meat" into a chicken piccata recipe?

Please please please understand the difference between expiration dates vs best use by dates. They are not the same. Just because the time has past for the best use by date it is still fine to eat. It may not have optimal flavor or nutritional value but that is not a reason to waste food. Expired foods may not be safe to consume. These should be disposed of.

Great point! Is there any way to tell the difference? Sometimes all I see is a date with no indication if it's "best by" or expiry! 😳😳

@@LetsEatPlants Interesting. I've never come across that issue before. I guess I would then tend to err on the side of caution and dispose of it. But I have been known to go ahead and use it if it's within a year of the date and there are no obvious signs of spoilage, ie, swollen cans, off odors or tastes.
