America's Test Kitchen found that a wash with baking soda in water gets rid of surface pesticides on berries, etc. You may want to toss a teaspoon into your water.

Interesting! I’ve only seen Dr. Greger’s info about vinegar vs. salt (nutritionfacts.org/blog/the-best-way-to-wash-fruit-and-vegetables/) but I don’t think he’s done a test on baking soda!! That’s a great tip, thank you. 🤗

Oh, that’s interesting! I usually use vinegar to wash berries before drying and storing in the refrigerator, but I’m going to try baking soda next time.

Yes, this is a tip i got from my chemical engineer friend. I use baking soda on all my berries.

@sebeckley Baking soda has a surfactant effect that helps wash surfaces. It's effective at removing pesticides, but it's not a disinfectant. Baking soda is an alkaline compound that can break down delicate fruit and vegetable skins and surfaces after 12-15 minutes. Vinegar removes pesticides AND kills bacteria.

Two things about iceberg lettuce. First, it is more nutritious than you think. It got a bad rap in the '90's but if nothing else, it is very hydrating...full of water. Second, if you just rap the core on your countertop, it will come out without a knife and you won't have that rust developing prematurely. And I love iceberg lettuce. Even being crisp, it's easy to chew, and has a mild flavor that doesn't really need a dressing.

Also, after pulling out the core, you don't have to pull apart the leaves. Let the water run into where you pulled the core out than turn over and let drain.

I can verify the slam the iceberg core on the counter tip. We did that at Tijuana Taco when I was in college.

Quick tip: always use a pinch of salt for cauliflower & broccoli to remove bugs that might be in the florets. Also to simplify things i usually use my silicone coasters under my cutting board (i use 2). Great video. My household rarely use cauliflower & broccoli. Instead we eat loads of napa cabbage, green cabbage & bokchoy. My son loves to simply grab a few leaves to add to his instant noodles. Meanwhile i grab a few leaves to blanch, squeeze, chop & season it w/ soy sauce, garlic & green onion to eat w/ rice. This is my go to side dish when too lazy to think what to eat.

You can use the white vinegar and water soaking method, too. It drives out the bugs.

Watching you prep your fruit and veggies is always inspiring. I like the idea of seeing you buy a batch of groceries and see then what you make with it. Then those prepped containers of food are encouring to look at when you open the fridge.

So glad you enjoyed! 🤗🤗 Yes! I can definitely work his go-to soup in an upcoming video. 😃 He keeps it very simple and pre-cooks a huge package of noodles so all he has to do is reheat them in the broth. 😛

If you hate processing lemons and limes, you can wash, quarter and freeze them on a tray. Then pop in a bag. That way you can pop one in water and it is like an icecube. You can let it thaw then squeeze into a recipe.

I feel you with the motivation! Produce prep is one of those things you know you need to do and are glad once you do it, but tiring thinking about it all the same. I’m psyching myself up for my farm box tomorrow after watching your video. 😊 Oh, and the iceberg lettuce takes me back to childhood. That’s all my mom bought. Now I need some iceberg! 🥹

If you pop the stem portion of the iceberg lettuce on the counter it will break away easily and take almost none of the leaf with it. Then break apart the head manually and wash each section intact. Shake off the water, ad a paper towel and put it in a bag to keep it fresh.

Absolutely! I fully dry the lemons and limes with a dish towel and then zest them all before juicing. I just store the zest in small tupperware and take out amounts as needed. 🤗 (I didn't for these because I have a lot saved already!)

Could you zest the lemons and limes either before or after juicing and somehow preserve the zest for later use? I know you can buy dried peel at the store, but I'm not sure how to best go about trying to dry or preserve it at home.

Yes! I usually do if they’re organic, or if I need the zest specifically for a recipe. I freeze it in a small glass tupperware or jar. 😊

Why does iceberg get a bad wrap? It can’t “not have nutrients” often people treat it like it’s white bread. No it’s not kale but it is a vegetable 🙃

I really enjoy your videos, but if you do all these prpeing at the beginning of the week won't this mean that you'll lose vitamin C and other good nutrients?

Great question! When I've researched it before, it usually says that the nutrient loss is pretty minimal, and for me it's outweighed by the fact that I'm much more likely to eat the veggies this way! But another way to do it is just to wash the veggies so that they're prepped, but not chopped. They'll still be ready to use but you'll just have to do an extra bit of cutting each day when you prepare meals. 😊
