Had to be on phone for business thru last half of show so tuning in this AM in the silence of my home/space. The beast is on sale for $99 at Costco in Maine I see thru 21st of January so even better than $119. Considering this item and definitely your classes. I need to assimilate all the good heartfelt spirit your delivery delivers - your kindness and generous spirit makes you and your environment an authentic draw. MY lounge around the house are joyspun pj bottoms. So soft! Drawstring & pockets! Pretty inexpensive.(from walmart )

The ridges are intentional, I believe, in order to create a stronger vortex. Combined with the high wattage, that's what helps to produce the smoothness.

Love this! As I have a family history of Cancer I'm always looking for plant based alternatives as I need to avoid the estrogen, igf-1 and possible BLV found in the milk of cows, sheeps and goats. Thanks so much for posting

Hi Kathy! Sorry I missed this live. The cheese looks great! If you don't have Okara I know you mentioned using yogurt...do you think you could also maybe use a firm tofu that has been processed to look like the okara (so almost like tofu ricotta cheese). Thanks for your input! 😊

This looks soooooo good - I'm in Canada and did order lactic acid thru Modernist Pantry??? can't remember costs but I ordered other things like powdered vinegars, kappa carrageenan etc and paid the shipping which was fast but I'm wondering about lactic acid from the brewery stores - it is food grade and a liquid and easily available in Canada.

I have used Kuzu starch in a key lime pie recipe. I believe there was also agar as well.

use pickle or sauerkraut juice as a substitute for lactic acid, but make sure you are using actual fermented pickles or sauerkraut, and not vinegar brine.

I used to strain plant based yoghurt (including home-made yoghurt) overnight in a gadget that I think is called a yoghurt strainer but it has a press (spring loaded top on it, gently pressing the liquid out). You can control the straining time -- longer time produced a firm, yet creamy soft cheese like goat cheese. I flavored it many different ways. It has been a while so I can't remember them all, but remember one with sundried tomatoes, another with herbs and lemon, etc. I wonder if there is a way to combine both of these recipes? The addition of the white beans may give it a little more bulk and firmness. I will give it a try.

Hi Kathy my granddaughter gifted me gifted me your The Ultimate Vegan cookbook for your insta pot for Christmas, because she knows I’m a fan. As I’m checking out the cookbook and watching this replay from your vegan goat cheese recipe. I thought it might be ok for me to ask if you have ever created a vegan buttery spread that isn’t made with oil, corn, or cauliflower. I’ve looked high and low and I can’t find anyone with that talent, until I thought of you. 😊

Thanks Kathy! Super rainy here in Toronto Canada too. I’m a stretchy leggings girl vs sweat pants. I’m usually in day jammies but I try to get dressed at least every other day in hopes that it will inspire me to venture out. Not sure if that made sense.

Hi Kathy! I'm new to vegan cooking and this is the first time I've heard of okara! Where do you get yours and do you recommend the flour equally to curd for making your cheese?

I look forward to your E book including oil free sauces, dips, etc... especially recipes that use alternatives to nuts and seeds (i.e. beans, potatoes, oats, tofu)! This goat "cheese" recipe looks great. If I use Okara powder instead, what measurements would you recommend using and would you add water to it?
