German Meatloaf:
Liver Cheese is the universal name for both: Meat Cheese with or without liver. Some call it German Meatloaf and in Germany, we call it Leberkäse or Leberkas or Fleischkäse. So many words for one thing, right? But it hints to the fact that there is no simple word for this amazing recipe. There is nothing in the world that tastes like Liver Cheese and it is one of my favorite things to eat!

I'm an American but worked out of my company's European office which was located just outside of Vienna, Austria from 2008 to 2019. Right across the street from our office was a little shack called SuB and Scharf because they had both sweet and spicy mustard for their sandwiches. They served Leberkase and Kase Leberkase (which had chunks of cheese mixed in with the meat) on a hard roll which I enjoyed very much. I would treat myself to one every other Friday! There was also a good TV show called Kommissar Rex where the detective's German shepherd partner would eat them too! Thank you for memories and the recipe, I will definitely make this! Ahhhhh! The wonderful, beautiful, very tasty Fleischkäse! Served in slices maybe 1.5cm thick and quickly seared in a pan with some Spätzle and Pan Sauce...Just amazing! The last one I made, after emulsifying the meat, ice, cure and seasonings, I pressed it in the loaf pan and left it in the fridge overnight. The next day, I cooked it in the Smoker with a little Hickory Wood...It was SUPERB! Densely textured, wonderfully pink and with a beautiful and dark crust.

I just bought Leberkäse at my German butcher shop here in Dallas, TX. My wife and I love it. I have it thinly sliced, and we serve it on an open-face sandwich.

I know it as Leberkase and my mom gets it at our local military Commissary ( my dad was in the military) we always ate it fried, very yummy

I was at my moms house today and I read her your blog with the recipe for this. She knew it, and there is a place in Bellevue Wa ( she lives in Steilacoom WA) that sells these uncooked, you take them home and bake them. ( for Octoberfest) thanks for sharing ❤️

I lived in Darmstadt for 3 years and in Hohenfels for 2 years and I miss traditional German food. I will have to give this a try since I cant get it here. I love it with the fried egg on top! Vielen Dank fur das video!!

So lecker! Ich habe in der nähe von Ulm gewohnnt und Bier ausgeliefert. Für ein snack, ich habe immer ein Leberkäs Wecken von verschiedene Metzgereien gekauft. Sau gut! You did a great job showing the steps in making this dish. We use to get this on brotchen near Straubing on our way to the Chechloslovakia flea market. It was fresh, warm and good.

Not sure I’d ever make this - our German butcher makes and sells this occasionally. It’s very good. But it’s really interesting to see how it’s made. Thanks for sharing this.

Thank you for the recipe and I will try to make it. Leberkase is nearly impossible to get here in Australia. The only shop I could get fresh baked Leberkase was in Melbourne and is now out of business. We are 500km from Melbourne and nothing like it is available here.

Exactly! I have basically asked every meat dep in my area for pork knuckles and they all promised me to check it and give me a call. Well, none ever called but at least I have tried ;-) Meatgrinders aren't that expensive though and my grandmother used a manual one with a hand crank and really made a lot of things with it.

I'd make a meatloaf in the same pan, pry why folks would refer to it as a German Meatloaf, or even a DIY Salami.

Hello, I would like to try the version with liver, how would you alter this recipe? Just add liver? Or reduce the quantities of the other meats? I know most people don't like liver, but it is very nutritious, and since I marinade the liver in whole milk for 24 hours before cooking (a great tip from Frank Tufano), I have grown to enjoy it, and the texture is much better too!

Just use the liver instead of veal. My mom used buttermilk for liver, it worked great.

Thank you for doing this recipe. It looks a little intimidating but the end result seems worth it. I loved Leberkase when I was in Germany but you can not get it here. I would love a video on some of the more obscure ingredients used in German cooking. I am get ready to make some Christmas cookies that call for some ingredients that are not readily available here. It would help if I could understand what they are. Eg Potash. There are a few choices here using the chemical name. Am I buying the right thing??? Yikes Help

Hi Wendy, the potash thing kept me from sleeping, too, and I honestly don‘t know if there is an equivalent here. It is such an medieval ingredient, even in Germany it can be difficult to get it. I have a whole book about Lebkuchen but can‘t really make them because I don‘t have the ingredients. But last December I published a video on this channel. It shows how to make my favorite gingerbread, the round Lebkuchen. They are so good. It look into the topic when we get closer to December, right now it is still too hot in Te as to think about cinnamon and cookies.

Thank you for the recipe. I love leberkase but I now live in the country in Australia and can't buy it here. You've given me the chance to make it here. I was waiting to hear you pronounce the name in German but you didn't. Lol. Can you tell me what happens to the water from the ice as the loaf cooks? Bye.

The water is binding with the other ingredients and makes the loaf juicy.

Hi, thank you very much for the recipe, we loved Leberkase when we tried it in Germany. Now we will try it at home :) Do you think we can do it without the phosphate and nitride? I don't know how we can find them, we are not used to using them in cooking. Why do we use them, by the way? And as for citric acid, can we use lemon juice? Thanks a lot in advance...

Great channel. Thank you for all your work. If I do not have a food processor, will Kitchen Aid meat grinder attachment be able to substitute for it when preparing Leberkase?

Unfortunately, that won’t work. The meat needs to really bind with the ice and for that you’ll need the food processor. Maybe you can borrow it from a friend if they have a food processor? You could try to get it combined in the kitchenaid with the paddle attachment but I’m not sure if it will be good enough.

I am surprised you can get Veal but not pork mince. For us in Australia, pork mince is as common as chicken or beef mince but any veal products are much harder to get, only certain times of year, like lamb I guess. Yes, coarse or fine grind. Personally, I don't like mince too finely ground as I find it becomes gritty to my taste but everyone has different experiences and preferences. Thanks for another great recipe, even if its one of the ugliest foods I think I've ever seen 😥

I brought this slicer from Germany. You can buy it on amazon.de and they will ship them to the US but the product with shipping will roughly cost you $200. There seems to be a slightly different version from another company on amazon.com which costs about the same: amzn.to/32rovAw

And, we all ate german even in my house as a child. But alas, I married a Norwegian. Lol 👍now I cook a food german meal once a week from my childhood. Thanks for the recipes!

we tried to make german Leberkaese twice, but we can't get the texture right, it comes out Grainy & not smooth, what are we doing wrong? Followed your Recipe, used Curing Salt but no Phosphate, can't find it. Any Ideas?

Did you try the link in my blog post for the phosphate? It is very important to check the temperature of the meat while mixing. It is hard to tell what went wrong, maybe the meat wasn't right or the food processor didn't cut it fine enough. Please read the entire blog post and it might give you a hint of the problem.

The phosphate is required so the Leberkaese retains the water. Unfortunately, phosphates are bad for you because they leach calcium from your bones. Everybody knows about the dangers of nitrites (curing salt) in sausage products but most people don't know that sausages also contain lots of phosphates. Enjoy sausage products in moderation. There are recipes out there that do not use phosphate but they may not make for the best results in terms of texture.

I think I've seen people use egg whites as (an emulsifier) in lieu of the cutter phosphate. May want to research that as an option before trying.

It looks like a moose, I've not seen liver cheese before, ugly but interesting food. It's kind of a cross between a pate and a meatloaf.

Hallo! Im Rezept steht "18g Nitrate". In Deutschland ist das Nitritpökelsalz mit 0,4-0,5% Nitrit. In Amerika jedoch hat das 6,25%. Die Menegn die du da Angibst sind LEBENSGEFÄHLICH!!! Ändere das bitte sofort.

​@@MyGermanRecipes Du hast ja auch kein amerikanisches verwendet. Das "Prague Powder" kann schon zu Vergiftungen führen in den Mengen. Bei Wikipedia steht, dass schon 500mg zu Vergiftungen führen kann.

Doch, ich habe amerikanisches verwendet. I lebe seit 2010 in Texas. Habe auch von meinen viewern keine Klagen gehört. Allerdings habe ich im Blog post deutlich gemacht dass ich mich mit Chemie nicht gut auskenne und jeder selbst recherchieren sollte on meine Angaben richtig sind. Wie auch immer, ich bin froh dass Du mich darauf aufmerksam gemacht hast und ich das korrigieren konnte.
