This recipe is almost exactly like I do mine. I used bacon 🥓 grease I had left over & a tblsp of olive oil. This is one of the most comforting meals to make on a weekend 😋

April 2024 and making this for a lunch tomorrow. I added leftover chicken to the recipe. My father smelled it coming through the door and said it smelled GOOD. Looking forward to eating tomorrow. 😋

Wow! Absolutely amazing recipe! I made this today and it was the absolute best. I didn’t have red beans. I had to use pinto beans, but it still came out absolutely amazing. I typically soak mine overnight. You can try soaking them for a few hours. It shouldn't be that big of an issue.

See, don't start Chef, you can cook it today, what! However I won't be using that regular rice w/o a rice cooker, I'll stick w/our Uncle...Ben's. NO Rice cooker for rice, chk, if works in slow cooker w/o rice cementing itself to the cooker. O Can't wait to eat this!

Be careful with the slap ya momma if you’ve never had it. I like it but if you have family or guests who don’t prefer spicy 🥵 use it sparingly because it doesn’t take much to heat up the dish. I use Louisiana Fish fry Cajun seasoning or the Emerril Lagasse stuff is good as well instead which everybody enjoys and you can always add your own extra heat at the supper table like I do 😀

I am the 5th generation of people born in Louisiana since the abolition of slavery. We and th😢e 3 generations born after me NEVER put andouille in our beans. This is a marketing tool. There are multiple excellent smoked sausages in Louisiana superior to andouille. Also, we use pickled pork instead of ham, just like the Haitians taught us when they brought the dish to New Orleans in 1810.
