This is such an underrated channel. I was literally thinking of making a low-carb biscoff yesterday and this magically popped up. Keep it up and thanks for sharing!
Personally, I am ok with it as I only eat 1 or 2 pieces at a time. I do not worry about these tiny details. However, as for others who are following a strict diet, I advise to skip the molasses altogether.
Personally, I think it tastes 70% close to Biscoff. It may be lacking on the exact caramel flavour from real sugar. My advise is to try the basic recipe once, then cook one piece of it as a test piece. If you are not quite happy with the flavour, add more spices to final batch, taste the dough as you go (it is eggless anyway), anf then, finally bake it :) Hope you find this useful :)
