I made the 2nd recipe because it was fast. Since I browned the ground beef in a cast iron pan, I just threw it in the oven. It came out with a wonderful crustiness around the edges. Delicious!
Here is our family recipe: 3 TB paprika 4 TB chili powder 4 tsp onion powder 4 tsp garlic powder 2 TB cumin powder 1 TB salt or no -salt(potassium chloride) if salt free
If I'm going to do an American taco pie, I'm going all the way old school and put in some black olives just like Mom used to do for our Old El Paso nights. Yes, I also live in San Diego and realize this is an abomination unto tacos but it's nostalgia! :) These both look really good and flexible.
LOL I’m with you on the OEP night! I just thought that was a given as one of the toppings, although I’d actually want them IN the pie and was feeling like quite the rebel for thinking I’d add them!
Sliced black olives, YES, absolutely. My very first taco (about 50 years ago) included chopped dill pickles. What can I say, I'm Canadian and had no idea what a taco should be back then. The "salsa" was canned tomatoes with some spices and pickled banana peppers all thrown in the blender. Ha Ha. I made my own tortillas though - and they were actually really delicious. Brought back memories.

I stopped eating keto about a year ago, but I still watch your videos. I love your channel and still use some of the recipes from your early videos. Edit: I think the nutritional info for the rectangular one sounds right. A green pepper isn't going to have 12 grams of fiber which is what it what need to have any negligible fiber per serving at 12 servings.
Both recipes look great for different reasons! The first one seems lower on net carbs and allows more wiggle room to add toppings to keep your total carbs low. The second recipe has more crunch which you would expect with tacos. I will definitely try one of the recipes or combine the best of both. The first has better fat macros, but the second one has more crunch. I also think the 2nd recipe has a bit more carbs because green pepper adds .5 carbs per serving (6.3 carbs for a whole green pepper). Anyway, thanks for all you do - we appreciate your being the guinea pig for us! 👍

Well done sir! These do look really yummy. I have used Carolyn Ketchum’s recipe for Easy Taco Pie which is more similar to the first recipe you tried. I do like the addition of just that little bit of salsa to the first recipe. I think it would add moisture and flavor.

I'll be making a mash up of the two soon! Like the idea of peppers and onions with a bit of salsa too. Negligible fiber in the first recipe unless you use almond milk. Looks yummy.
Just saw this recipe come up as we were deciding what to make for supper. We happened to have some taco meat left, so, voila!! (Small) casserole is currently in the oven with very little prep. Should be done in about 10 more minutes, and I'm hoping it will be a new favorite for a a quick throw-together meal.

Ha! That’s was a lot of food. It actually does freeze well. Battles like this I usually split them in half, freeze the other halves and eat on the remaining halves for a few days.
being "high' in sugar is a bit misleading. Few people are eating a whole onion in one sitting. It's a higher percentage of carbs to fiber ratio, sure, but that only means so much.

I made it yesterday. I never stick to recipes! Used ground chicken, cooked with half of a large bell pepper and half an onion. Added maybe 1/3 packet of a natural taco seasoning. Mixed 2 eggs and 1/4 cream and poured on top. Added a generous amount of Mexican blend cheese. Delicious, but as I live in NM, I'm going to try it with a small can of the trader Joe's chopped green chili instead of taco seasoning. Yum.

Ok, these both look AMAZING! I think I would definitely add the onions and peppers. AND... I bet Spicy Taco Keto Chow would work great in place of the taco seasoning. Have you ever tried cooking with Keto Chow?
"...for us American folks." 😂🤣 We usually use shredded chicken, shredded meat (barbacoa), lengua, or shredded pork for tacos and tostadas. And we *never* use cheddar cheese on our tacos and tostadas, and no packets of taco seasoning. And we never make burritos. That's an American invention. 🤣 Yes, I'm Mexican. 👍🏼 🇺🇸 🇲🇽 What you're making in the pan on that second recipe is basically *Picadillo* minus a few ingredients. Everything looks yummy and I would make either one of those! 😋🍽️🌮 But I'd reach for that second one in an instant! 😋🍽️🌮👍🏼
I Love this casserole! The first one I ever tried was six servings six eggs and some cream and I did taste the eggs a bit too much but I just cut the eggs back to 3 or 4 depending on if jumbo eggs and now it's perfect. I also like onion and chiles or a few tomatoes in mine so best option is a mixture of the two recipes. Seems like many times that works out best! Thank-You for having this channel it's nice to have someone to go on the Keto Journey with.
YT is not telling me your on. I went through youtube and wrote down every taco seasoning recipe I could find and then averaged up the ingredients and made my own. OMG so good. I've moved since then and now I can't find the papers with my crap written down. lol

I’ve been in a real food rut, eating the same 5 foods over and over lately, one of which was tacos/burritos!! A second one was chili. A third is Chiles Rellenos Casserole! 🤣🤣 You can see this is exactly my kind of food. I made the Taco Casserole and it is awesome! I enjoyed mine on a bed of baby spinach and my hubby wanted his on lettuce. We added a little Verde Salsa and it was perfect. I think we can get three meals for two people which is really helpful in these days of higher food prices. Thank you for the recipe! Love your channel!!!
I used the inspiration of this video to make my own keto taco casserole. I rarely cook from a recipe. I use them as guidelines. That's what I did here. I went to the website of the one I wanted to look at (the 2nd one). I did use egg and cream, though, but only a tablespoon of cream and only one egg. I added the white onion and bell pepper, too. I used my own spices including whole cumin. It was yummy.
