On this video, I smoked up some delicious beef ribs on my Yoder Frontiersman. I used my top 2 beef rubs and I wasn't disappointed with either rub. The first rubs I used were from Victory Lane and the second rub was from Plowboys BBQ.

Simply superb! The crowning glory of any Texas BBQ platter is a beef rib big enough to make a Flintstone jealous. Hope your family is doing well. Those ribs looked sooooo sweet! Your a man after my own heart, that smoker is clean & seasoned very well. Your Costco and my Costco don’t have the same meat buyers. I have 3 Costco warehouses near me, I’ve never seen beef back or short ribs like those. Additionally, beef in the northeast is always $$$$, today it’s $$$$$$. It’s nice to have someone to live vicariously through. Thank you my friend!!

AWESOME BEEF RIBS JOE!!! I can never find beef RIBS this size in the small town where im from in Texas. They look perfectly done. I have to definitely try this once I find a good butcher to cut me these size of beef RIBS. They are my favorite and also I need to try the rubs you use. The rubs looks perfect. I look forward to all the videos you put out you do an amazing job. I have a question I was wondering if I could get your advice on? I did a brisket a while ago cooked it pretty low and slow around 225 It was a prime brisket from Costco I went until it was probe tender but I noticed that the thinner part of the flat never got tender only the middle or the thickest part of the flat got tender first internal temperature was around -205 The thinner part of the flat was around 190 I was trying to wait for the dinner part of the flat to be tender but it never really seemed to happen after I pulled and it rested the brisket was dry and a little bit on the brittle side Should I have only went for tenderness on the middle of the flat or the thickest part and not worry about the thinner part or where exactly should I be probing for tenderness? I also wanted to get your opinion on hot and fast versus low and slow I've always wanted to try hot and fast brisket but always chicken out do you have a preference from low and slow too hot and fast? thank you for everything you do and keep pumping out those great videos

Hello CenCal, really great question. The thinner part of the brisket tends to overcook compared to the rest of the brisket. This is the reason I try to trim off the really thin parts. You can also try placing a piece or foil on that corner to protect the brisket a bit more. You should probe somewhere use to the flat and the point as well. Low and slow is by far my favorite but sometimes hot and fast is the way to go. 👍🏼

Joe another out of the park cook!!! Those ribs look delicious!!! Joe you seem to cook only on top left of the frontiersman and I’m considering that smoker could you explain why? I’m also looking at reverse flow smokers....just want to make the right decision!

Hello Robert, great question. The way I have my smoker set up right now is to have 4 cooking zones. The top right is a little hotter 260 -275, bottom right is at 250 but heat mainly on bottom so it would have to be a bottom up cook, bottom left is 225 and top left is 250. I can easily make my Pit run even throughout by placing the tuning plates back in. I'm still messing with tuning plates but I really like this set up. I could cook different meats at different temps which is what you want in a Pit.👍🏼

Hi Joe, you handle the knife so well. What makes you decide to use olive oil before putting on the rub? I noticed you sometimes leave meat bear before seasoning. I bake a turkey in a paper bag last night. Ever hear of that process? Been doing it for 40 years.

Hello Miri! It all depends on how wet the surface of the meat is. These ribs had a fairly dry surface so I decided to use a little olive oil as a binder. That's interesting on the paper bag Turkey. I used to cook blueberry cobbler is a paper bag when I was a boy scout. Do you rub the bag down with oil or butter? Thanks for watching Miri. 👍🏼 I saw your smoker, that thing is nice!🤘

Smokin' Joe's Pit BBQ hello again. Turkey in a new grocery paper bag: no I do not rub the bag down nor do I ever baste the turkey. I use to slip pads of butter between the skin and the breast meat, but don’t bother anymore. No fancy turkey needed. They turn out moist all the time. 325 degrees, unstuffed, time as on turkey tag. I do test with thermometer. Glad you think my grill is nice. I’d like to try a slab of some kind of roast, but need to get to Costo when we get ‘free.” I really like watching you trim the meat. And. You’re very easy to listen to. BTW: Russel wondered where you were last Friday. His current video is Russel funny....poor, sweet, tries-so-hard.

I let my Pit come up to temp and scrape them with my industrial size grill brush. This smoker needs a good deep cleaning inside.👍🏼

Great video and I'm a newbie I just purchased and electric smoker and want to do my first rack of pork spare ribs. I purchased some hickory chips. Any advice as far as time and temp? thanks

Hello Esco, set your smoker to 275 and place your ribs in there once the smoker comes up to temp. Smoke it for 2 hours, wrap it in foil for one hour. Then take the ribs out of the foil and let the rub sort of get firm again. Usually around 202° and once the ribs probe tender they're ready.👍🏼

Those look amazing!!!! I have a General Question. I am not sure what to purchase next for my collection. Should I go with the Oklahoma Joe Highland Off-Set Smoker or the Traeger D2 Pro 575 Wood Pellet Smoker With WiFIRE™ Controller ? I am really stuck. i have an 18 inch WSM, a 22 inch UDS, an 18 inch and 22 inch Weber Kettle's too. I would love to use real wood on a smoker, but also love the set and forget ease of a pellet smoker. Please could I have your honest opinions. Thank You

Thanks Lucas, if you have the budget, go for a Yoder pellet smoker. I'm not a fan of the Oklahoma Joe smokers because they're made pretty cheap and they leak air all over the place. Yoder also has some offset smokers like the Loaded Wichita that would fill your needs. 👍🏼 If I had to pick one, it would be the Oklahoma Joe.

I wash my pits before I use them with Dawn dish soap and scrape the grates with my industrial size grill brush. That's honestly all I do. If I spill anything, I wipe it immediately.👍🏼
