I agree about the ratatouille being best after a day. I made it as the vegetable dish for my family once and no one liked it -- especially my toddlers. I put the leftovers on the table the next day with the intent that I would be the only one who would eat it (I sort of behave like a human garbage disposal) and it was universally loved. Everyone asked me what I added to it to make it better but all I did was stick it in the refrigerator over night!
I like how he isn’t cooking these vegetables and their flavours into the ground it looks fresh. I’ve never been a ratatouille fan. But I’m looking forward to trying Chef Ludos’ style with the poached eggs.
LMAO 😂😆 about the Ratatouille Therapy. Loved the dish as well all the chef tips. You’ve certainly made me a better cook every time I watch your videos and learn something to up my cooking game.
Just imagine cutting mounds of vegetables into perfect, identical pieces and then having to cook all of those into separate pans just to get that high-end restaurant quality for god knows how many people and how many days of the week. It has to be maddening.
its kinda hilarious how salty he is about his time with Alain Passard, of 3 Michelin star L'Arpege fame ... wonder what his old teacher thinks of his success!
