Today, as we sit in sunny southern California waiting for our truck to be fixed, we make some Chicken enchiladas in the lunch box. We hope you all enjoy a little of this beautiful sunshine, even if it is only through this video.
☆☆ Ingredients ☆☆
•2 tsp. avocado oil
•2 Tbsp. onion, diced
•1/2 Tbsp. chili powder
•1/2 jalapeño, seeds removed & diced
•1 Tbsp. green chilies
•1 tsp. ground cumin
•1(12.5 oz.) can chicken, drained
•1(8.75oz.) can corn, drained
•1(10 oz.) can enchilada sauce
•3/4 c. chicken broth
1 c. instant white rice
☆☆Directions☆☆
•Preheat lunch box & pan
•Add avocado oil to hot pan & heat
about 60 seconds
•Add onion, jalapeño, green chilies,
ground cumin & chili powder
•Stir, cover loosley & bake 7-10
minutes or until onion is slightly
translucent
•Add chicken, corn,enchilada sauce,
rice & chicken broth
•Mix well, cover tightly
•Add 4 quarters to bottom of lunchbox
•Bake on top of quarters 1 - 1 1/2 hours
•Remove cover, add cheese, bak 10-15
minutes more or until cheese melts
•Garnish with cheese, guacamole, pico
de gallo & dried cilantro
