4:55 Barry is actually right, "refried beans" are generally only fried once, the name comes from a mistranslation/misunderstanding of "refrito" which means "re-heated" in Spanish not "re-fried" as the first time they are cooked they are boiled/steamed generally. Thus once fried they have only been fried once.
@IamQED
@IamQED 5 месяцев назад
Not quite; "frito" does mean fried. However, the prefix "re-" is sometimes used as an intensifier in Spanish, so a better translation would "well-fried beans".
@toni_go96
@toni_go96 5 месяцев назад
I think the reason Ben gave the camera that look is because in early sorted videos (like multiple sorted videos) they've talked about how refried beans are actually only fried once and it's a mistranslation.
@esmeecampbell7396
@esmeecampbell7396 5 месяцев назад
@@IamQED Wikipedia says either, but seeing as refried beans are generally only warmed through in oil rather than really crispy like deep fried food is I think "re-heated" is a more accurate translation. "Well fried beans" would be far more crispy than refried beans are generally served.
@danielamaterna7348
@danielamaterna7348 5 месяцев назад
Here in Ecuador refrito refers to the base mix for many meals, including onion, tomato, pepper, sometimes garlic, carrots, etc. like an Italian sofrito or French mirepoix. Most bean dishes here e.g. 'menestra' have a variation of refrito added to them, so I'm assuming it's similar all across Latin America and probably why the name exists.

@@captainace1277 Mike got screwed by the time restriction in the apron battle based on Barry getting the same badge twice and not having another removed that they said should have been. So the entire event was unfairly biased to begin with. Also over the years I have watched sorted, Barry has never done exceptionally well in general. Ben seems to almost always be biased in his favour based on the flavour profile and not how good the cooking was. Every so often he comes up with a good thing, but when that fails then the result is below average. Jamie and Mike both tend to get average to above average more often than not, so unless it's a measure of their absolute top potential only, then Barry never deserved the apron. I guess you could say he was better on the day, but that is meaningless if he averages below the others on most other days.

The trick with hash is to start browning the potatoes in butter or lard first, and once you've started to get color on opposite sides of each chunk, in goes the beef, which will cool the pan and keep things from burning. Once you have some crisp on the beef(I turn an edge over to see how it's doing), get a LARGE spatula, slide it under a section, lift and flip, repeating until everything in the pan as been flipped. Once the other side is crisped up, serve. You'll have to work out your own timings for the fried eggs, since every stove is different, and my gas range would do a faster job of it than that glass-topped heating coil range you've got in the studio.

Jamie had so many directions he could have gone with those. Very lucky picks. With Barry’s picks my mind went to Spanish instantly. Possibly even dressing up the pea with some cream and herbal flavors and doing chilled soup. Serving with some nice toast. With the beans and olives you have tapenade, or spreads, or even use the bean water and see if you could make a nice foam.

So I go with Ben making something with the last three tins. And to have Barry and Mike go toe to toe.

Jamie: deconstructed -almost- moussaka. Cornes beef and lentil ragu, ratatouille enhanced with some fresh herbs and a creamy cheese soufflé. Take a bit of each and eat together.

And the Baz crush deepens watching him give the credit where it’s due.

Definitely wanna see Ben try to do something with the extra cans, but love this format in general.

I do really love this series. It reminds me of a show we have in America called "Chopped," which is a similar concept of cooking with mystery ingredients. The difference is, on Chopped, the contestants are all trained, professional chefs, whereas Baz, Mike, and Jamie are far more relatable to watch and they end up making the kind of thing I would do if I was on the show.

I want to see both a battle between Mike and Barry, and I want to see Ebbers tackle the leftover tins please! :D

I would love to see Ben try and cook those leftover tins! That would be a challenge!

These are some of my absolute favourites. The dishes must either be mind blowing or horrible to eat. Curious to find out which one either for them is going for.

I feel like Barry's ingredients would have been great for a Thai green curry with the pea soup and beans, and salted olive fried rice! Add in some coconut milk and some sauteed onion and snap peas for more texture in the curry sauce, plus maybe a little red chili for heat, and you've got a perfect midweek meal!
