I make a LOT of mushroom bacon, mostly out of king oyster mushrooms, but I wanted to make an easier version... from a mushroom everyone can find... the portobello... now usually with the portobello mushroom people simply slice it up and throw it in marinade... that comes out good, but still very mushroomy.... I wanted to do it a new way.. a way that brought more bacon flavors and textures to this easy to find mushroom!
This is using what we learned in my last video about mushrooms..

Isn't porcini more flavorful than portabello? I've heard stories of people in Eastern Europe just avoiding portabello and going for porcinis and parasol mushrooms.

What?! Bahah where do you live?!!! Porcini is the easiest for you to get? I don’t think I’ve ever seen them in a store not dried. Damn that’s pretty crazy, you’re very lucky

Fresh porcini mushrooms are just the best. So much more flavour than oyster mushrooms but still an amazing, firm texture. Been forging these since I was a kid and they have always been my fave :D

@@dolcemaddalena you'd have to rehydrate them, which doesn't give you the same texture or absorbent quality as fresh. Probably not worth it. However I think grinding dried porcini and adding them to the brine night work!

I’m so thankful you tried this with a mushroom that’s easily accessible. I live out in the boonies and my closest store does carry the large portobello! Looked online for the king oyster mushrooms and way too expensive to order. Thank you for this option and will be making these this weekend!

Mommy warning! (Because I'd shout at a running child in kindness like every mother I know) Boy, use your cutting gaurd or I will ship you a steel glove! There's no time today for a trip to the hospital! Congratulations on your upcoming nuptials. You will have to make some kind of molecular gastronomic mushroom groom's cake. There has to be a way to tastefully incorporate magic mushroom powder and meat analog into the traditional fruit and nut confection. (But I can't wait to try this. Thank you! It looks delicious.)

@@mustwereallydothis Here, we have a bandaid station. Please, don't have a heart attack or wreck your truck. The nurses and doctors are kind, but we have no new equipment. We also staff the ER on a skeleton crew- and I'm sure the security gaurd is also the maintaince man. And likely also the mechanic. Plus, they now want you to deliver your own newborn, because all the nurses have been sent to ICU because the nursing home had a sick patient that gave everyone influenza. They long ago shipped everyone at the VA home, or to another location, and it didn't help. And then, there is me. I cannot wear a mask because I can't breathe against the resistance. I would be given oxygen, but the supplies are short. Cuz dumb people think they should touch everything at the store. I have my own germs AND I still don't want them- which explains why I wash dishes and clean the toilet.

They really do!! I love mushroom bacon, or mushroom steak... or mushroom chicken..... hahahah I'm starting to dive more and more into mushrooms as meat. I feel like there is still so many new ways to prepare or flavor mushrooms that we havnt figured out yet!

Looks amazing! Can’t wait to try! One strange trick I have been using to replace bacon in sandwiches is sautéed mushrooms on super high heat and after they sear throw some salt, pepper and cook them for a minute in some bbq sauce! Weirdly perfect bacon replacement and I’ve tried em all! 🥓

Idk if this comment is going to show (RU-vid apparently isn't working right now), but for real, everything SS cooks in his cast iron skillet is burnt. I mean, I've been watching his vids for a couple years now and I always try to tell myself that it's just "color" on the food, but no. No, no, no. Sometimes it legit is burnt and I wish he would acknowledge that so people don't think that's what food is supposed to look like when they cook.

its pure frustration hahah... I need to replace my stove. I have a newish Samsung stove/oven and its a nightmare. You can put it on low and it will be low for a bit but then immediately kick way way up. There is barely a difference between all the way up and all the way down sometimes.

Hola, I don't comment much but I saw your algorithm issue post. While I'm here, can you consider doing a video talking about the science of the different ways to infuse flavors? I've never tried a brine, but now I will. I recently tried a modified version of your jackfruit chicken and it well well, but I'm wondering if there are more ways to make my dishes take on the meat flavors/spices. Thanks either way! Hi there have just seen your message re youtube not promoting your videos.... your ingenuity is outstanding with all the approaches you share - but am going to say something that might not be too popular with your followers - vegetarians & vegans don't want to constantly be hearing the comparison to the 'flavoursome' textures of meat or fish. i.e carnivore textures, tastes as if that's what vegans are missing. So seems like the references are for your requirements to make sense of making vegan foods...? Perhaps using labels like 'bacon' 'steak' ' chicken' etc is not that interesting or helpful to vegans or vegetarians. There's a case here to be totally innovative in your total approach with no reference to anything other than the true ingredients & spice/herb combinations that can uniquely support the vegan/vegetarian perspective. Your language/ expression could reflect the new paradigm. As a vegetarian i'm not hankering after animal meat-like experiences of food. So as a suggestion ... changing how you express your innovative food requires a sensitive, more subtle & unique way of capturing the vegan/vegetarian experience. It seems like you're aiming at people who miss meat & are still hankering after those old tastes. Be brave & utilise your creative confidence to 'press the reset button' for your rethinking to be fresh, smart, refreshing, unique, light & exhilarating with all your creations. There is a new language here to be explored which you are not embracing by keeping the old angle alive as the main form of reference. Personally i'm totally fascinated by the techniques you share, but very quickly am wanting to turn the video off because of all the constant carnivore comparisons - am left sensing & smelling grilled bbq or fried meat which does nothing for me. Am desiring a lightness & brightness of touch to bring forward the exciting potential of spices, herbs & seasonings that enlighten the new food concept. The Chinese like to make soya foods look & taste like seafood for example & that's the last thing vegans/vegetarians want to encounter when they eat visually or flavour-wise. So a great opportunity here to use your ingenuity bringing forward uplifting ways of communicating the nature of vegan/vegetarianism. I quite get this is somewhat of a big ask, but am sure your audience/followers would grow enjoy & support your offerings much more. Anyway something to think about.... All the best with your endeavours.

I'm going to try this. I've made "unagi" for sushi from thin sliced portobello mushrooms, this doesn't look like it will be a huge leap from there.
