➼ Einkorn bread at home recipe:
Ingredients:
• Einkorn flour: 100%
• Salt: 1,8%
• Yeast: 0,8%
• Tepid water: 60%
• Kneading: 4 min at medium-low speed and 2 min at medium-high speed
• Bulk fermentation: 30 min at 23°C
• Shaping
• Final fermentation: 40 min at 23°C
• Baking: 20 min at 240°C and 25 min at 180°C
• Cooling: 45 min on a cooling rack.
