I love cooking from scratch for my family! Life can get so busy and after a long day of work, I do not always have the energy to cook. Freezer meals and batch cooking save me! If it was not for freezer meals and batch cooking we would eat out way more. Eating out for us now is something for special occasions and by making freezer meals we can still enjoy a home cook scratch-made meal daily! I hope you try it!

I have 5 kiddos including a newborn and I do not have time to dedicate a day to food (although it would be well worth it). I quadruple a dinner recipe 1x a week to fill my freezer slowly. It's a game changer for familier with limited free time

Very smart 'hack'. I think the youtuber Jordan Page of "fun cheap or free" has a similar philosophy. If you're already making it, double it. She has a large family too. Congrats on the new addition.

I have 3 kids and work full time as does my husband. I regularly cook double batches and freeze the extra for nights when I not enthralled by the idea of cooking from scratch xx

Can anyone explain to me how this girl is such a boss? She is so young yet already has command of cooking by feel and simultaneously cooking ten different recipes at once! Amazing. I am in my forties and it literally takes all my faculties to cook three dishes at the same time.

We all have our strengths and weaknesses. I'm sure she's not perfect at everything she does. Just happens to be what her channel is about, of course she isn't going to make a channel about her weaknesses

I was just like this in my 20's. Coming from a large Italian family, I learned early on that we needed to fill up our freezers. I am in my 50's now and still do this! She is an awesome young lady. I just subscribed ❤

I think it depends on how long you've been cooking. I have been cooking since I was 8 (now 29), I can host 50 people, with multiple courses no problem, but that's because I've been cooking for more than 20 years. It's not about age, it's about experience.

It takes me hours to cook one dish from scratch and I end up making a disaster of the kitchen. I can’t even imagine what kind of chaos would ensue if I tried to do multiple things at once, lol! Becky, you are the embodiment of my lifetime cooking goals.

I'm the same but I kind of adapted Becky's freezer meals. I choose 1 thing to make a bunch of and it's not necessarily what I'm making for dinner. I spent 5-6 hours 1 day making my marinated chicken (8 different marinades 49 total dinners) 1 day I spent 4 hours making lasagna with meat sauce (30 dinners) same with baked spaghetti (same amount) it doesn't take my whole day off and you get into a bit of a rhythm. My times are with clean up

Plan out your meals. 1. Have little disposable dollar tree plastic cups with lids to put your measured condiments in the morning or when you have free time. Your older kids can help measure and do the calculations for a big batch. 2. Marinade meats or poultry ahead of time in a one or two gallon zip lock bag. 3. Cut vegetables and put in bins the morning of. 4. Create a menu. That saves time and money

I am so happy to see all the various cuisines you cook: Thai, Moroccan, Indian, etc. I find so many of the homesteaders and batch cookers on RU-vid make almost exclusively very American recipes so I love the international flavours you work with! Much more in line with what and how I like to cook 🙂

@@YeshuaKingMessiah they’re really not (expensive and complicated). They CAN be, but so can food from anywhere. But you can buy a jar of butter chicken sauce, for example, for the same price as a jar of pasta sauce most places. Or whip up most middle eastern recipes with common spices most cooks would have in a decent standard spice cabinet. People just cook what they know and many don’t venture outside their comfort zone, so if it’s not something they’re familiar with or grew up eating, they just don’t explore new food. People are of course free to cook and eat whatever they want, and share whatever recipes they want on their channels, I’m just saying I appreciate the diversity she offers here.

@@YeshuaKingMessiah nah the spices really aren’t pricy or complicated at all. If you go into the international foods aisle or store it’s dirt cheap. I also live in one of the most expensive places in Canada as well. The problem is you gotta stick to one or 2 cuisines because your spice rack gets crazy

@@Ashley-cr4ow I bought at bulk foods/bakers supply place but those are only in cities. Where I am there’s no international aisle lol a maybe Mexican section but those are easy spices. I miss my “bakers” supply place. Nuts, seeds, dry fruits, bulk grains, not just herbs n spices

These are some good looking meals! Don’t get me wrong, I love watching meal prep/ freezer meals on RU-vid but sometimes the recipes are like 8 cans of cream of chicken and processed veggies. Haha. You have some amazing skills to do this using fresh foods and yummy recipes! Jealous of your husband!!!

Wow! I didn't notice any haterade in her ingredients,. Y'all must added that. Many people are trying to feed their families on a LOW income...JUST LIKE ME. We do what we CAN afford. We don't need to be slammed for it. Not everyone has an unlimited bank account. Be thankful for yours--- clearly you have it. But you don't have enough to crap on anyone else. PS...I make my OWN cream soup. Cream of Celery makes an awesome dinner. Live and let live...since you don't know how to encourage anyone.

You really inspire me! I love how “real” a cook you are. Thanks for not editing out mistakes and showing how to course correct! Some of us use our “lack of perfection” as an excuse not to try. I have found that stopping to clean up the mess from preparation makes meal clean up less daunting too.

First-time watcher here. I’ve batch-cooked freezer meals like this for new moms and it’s so satisfying! I wanted to say I appreciate you mentioning that you use the food scraps for your chicken feed, and that you’re trying to reduce plastic while thrifting the Pyrex dishes to again reduce how many new items are made (when we already have enough for everyone on the planet) 😍. Just growing your own food reduces a ton of packaging waste as well. Thank you for caring about the planet! 🌏♻️

My answer is 3 months late…but Becky has three freezers. One upright and two chest freezers (one chest freezer was left by the previous homeowner).

Chances are, she covered them all before freezing. I do some stuff like this and I will freeze the dish solid then wrap and seal it, so they can be stacked.

Wow Becky I’m inspired. I suffer from heart failure and do my cooking on a rolling stool when I have the energy. My hubby needs a knee replacement so it’s hard for him to stand and cook, or even roll around as 8 do. If I can do the freezer meals on a day when I have energy it would be great for us (my hubby also is an awful cook and hates doing it.). I am going to try this. Thanks for the ideas.

A rolling stool is a great idea that I can't believe I haven't thought of for myself. I have a bad back that has progressively been getting worse over the last 3-4 years and it hurts badly if I'm standing for 20+ mins at a time so I can't do big batch cooking like this. I will definitely look into getting a rolling stool for myself so I can get back into the kitchen!

I rolled an 18wheeler 20 yrs ago, and progressively getting worse. I have good days as well but, on the bad days I take my hubby's walker that has the seat n breaks, and use that while I am in the kitchen.

I used to make my own 'TV dinners' like Becky, but for one person portion, 'cause it's just me. My tip, is that 90% of cooking is chopping things up. I had a huge coffee table, so I just sat in front of the TV while chopping everything. Then the next day, cooked and put all the dishes together.

I have 3 freezers stuffed full of meats, veggies and all the things but my family is moving in the next 4-6months. You’re videos are giving me the inspiration to bulk cook and burn through all the things we won’t be able to take with us when we move from Hawaii to Washington state. Dang girl. The goal was to have a bigger house for the space eventually and now I just need a walk-in freezer to store all the freezer meals!! Super impressive, but also you kept the process real. Thank you for mentioning possible substitutions along the way because we all start cooking then realize halfway through we don't have all the ingredients we planned on. I am a 62 year old who has worked at high-level positions for over 40 years and last year I was diagnosed with congestive heart failure, which has caused our lives to change quite drastically over the past nine 11 months. One way it has changed is that I am no longer able to work. I was the main source of income for our household and the adjustment has been quite challenging. I watch your videos often and today am watching this freezer meal prep video. I planted a very small garden in raised beds and grew tomatoes, cucumbers, zucchini, jalapeños, basil, dill, cilantro and mint. You have inspired me to try and increase what I grow next year and to be more intentional about what I plant. I am also trying to wrap my head around doing some freezer meals to save money on groceries and eating out. I am often too fatigued to do long tasks but I am hoping to adjust your ideas to my lifestyle and just do some steps and rest and then do more steps. Your enthusiasm and sincerity in what you do is truly admirable. Keep up the good work and be encouraged that what you are doing is helping others in real ways.

Oh. My. Goodness. Becky and a freeze dryer! I can’t WAIT to see your adventures with that new toy! Two tips to consider for meatballs: • When you mix stuff into ground meat, I find it’s easiest if you mix ALL the other stuff together first (chefs call this a slurry), then add the meat and mix it. It just combines faster and more thoroughly. This is great for meatloaf or burgers, too. • A fast way to portion out meatballs (or cookies) is with a “disher” which looks like a small ice cream scoop. You can get them in all different sizes. It makes quick work of portioning this sort of food into identical-sized portions. Once portioned out you can shape them a bit and you’re good to go!

You could also look for a cookie scoop, that is what we use for portioning things. :)

I use the hole in the middle of the spaghetti spoon and just push into the meat mix then scoop it off. Works well if you don't have an ice cream scoop.

@@AcreHomestead Becky I made the pie crust and it was an epic FAIL!!! The worst pie crust I ever made. It would be nice if you would do SOME specialty video's where you are more SPECIFIC with your recipe. You talk fast and work fast and I love that BUT....Pie crust recipe very confusing.

You are an amazing young woman! As a retired high school foods teacher, I have to ask, how did you learn to cook? This video just popped up on my youtube home page so I watched it. You are well organized...that in itself is an amazing skill. You must have spent several hours just prepping for this day. But what a money and time savings advantage. When you add your liquid to your roux, add it slowly. A little bit at a time, mix until incorporated then a little bit more and so on. This will keep you from having to struggle to get all of the lumps out because you won't get any lumps at all

When I prep my meatballs, I put them in the convection oven on my ventilated Italian Baguette pans with a cookie sheet below. Then freeze them (pre-cooked). (It takes away some of the fat if using a higher fat ratio meat.) They have a nice crust on them that holds up well in a Crock-Pot sauce, or are ready to heat and serve on baked subs. It's so great to see young people enjoying the kitchen!

My parents would make a huge soup pot of homemade spaghetti sauce and then freeze potions on ziplock bags. Sure made cooking so much easier but also budget friendly. Thank you for sharing so many delicious recipes with us

Tomatoes, green beans,pickles, etc. I tried each thing once. Including freezer. Strawberry jam. My grandmother. Canned a lot too. My sister did inherit. The same love if gardening and canning! Everything looks delicious! I know you don’t like using plastic bags, however, if after wrapping in foil you could put each dish in a 2 gallon storage bag or the large storage ziplock bags. That way they can stay in freezer for up to 6 months to prevent freezer burn. They can also be reused multiple times because the bags never come in contact with the food since they are wrapped in foil. That’s what I’ve done in the past with my freezer meals. I say past because I still have not replaced my old freezer yet, but getting a list of freezer meal ideas for when I do. Anyway, I really enjoy your videos. Thank you for sharing!

This is so inspiring! Love seeing all the fresh ingredients and amazing amounts of herbs and seasonings! So many people prepare frozen meals with no salt and pepper, or using canned soups.

I definitely wanna start doing this! I live alone, and most of the time, I cant be bothered to cook a full meal for just myself. I end up eating a lot of fast food. So I think this would be great for me! Spend one day cooking, but then have meals for the next month!

I oftentimes worry that people go wrong by microwaving their food and I was glad to see that your food prep is for the oven and you do stovetop and instant pot preparation. Your energy is amazing. You are so talented and fun to watch. I am a food scientist, I did a study on microwave cooking in school. I like the way that you keep the food nutrients intact by not microwaving, which destroys nutrients and vitamins. I like what you do!

I always batch cook as it really does save so much time and love this video. The only thing I would never do is pre cook pasta. It only takes 9-13 minutes (depending on the pasta shape) to cook and is always better than precooked reheated pasta.

For chicken tetrizzini the pasta acts more like a gooey layer - it's intended to blend into the creamy sauce, not distinct from it like a traditional pasta meal

Wow - Western Ireland? What a beautiful part of the world. Got to visit there a couple of years ago and travel to central Ireland to see where my GM was born (1898) and to meet several family members who are still there. I have a raised garden in N.GA (USA) and am planning to expand it next spring/summer and put crops in the ground. Happy cooking!

If you make a multi herb tomato sauce with sauted onion and garlic- it is wonderful in soups and stews. When I cook herbs, garlic and onion is the foundation of most of my recipes. That will be a game changer for sure.

So you have inspired me! 2 things: 1. I have started keeping my eyes peeled for glass pans to replace using metal ones. I got my first one today at Goodwill! 2. I am starting to get meals in the freezer and some food preservation! 6 chicken meals in marinade in the freezer today. Green onions were on super sale at the store today. I chopped the onion part and made pesto with the green tops! 😁

I haven’t bought green onions since the 90s. I take any store bought onion, cut off the root end, plant them. They grow scallions, and they grow every year. Just don’t pull them out of the ground-just snip them with scissors, and they will grow back 2 or 3 times again over the summer. I chop them up and dry them under the sun, and freeze bags of them for scrambled eggs. I do the same with the cloves of garlic. I chop off the little hard stem from each clove, and plant them. They only seem to grow 1 time per summer, but I mix the green part with chives and onions & dry them together. I put them in jars, and cook with them.

I don't know if anyone else has said this but we use a wire cooling rack on a sheet pan to bake greasy things like bacon. It allows all of the grease to drip off and you won't have to pat dry the bacon as well as allowing you to collect the grease. We use this method with a foil covering and water below to steam Japanese dumplings in the oven as well.

Just wanted to say thanks for what you’re doing! I’m a mom of 4 with one on the way, and we have been trying to eat out less and also are on some specific diet restrictions. This was the first video of yours that I watched, and since have watched many more. Your ideas, fortitude, methods, and recipes have inspired me so much.
