Making Veggie Burger 2/3 "Pate & Mayonnaise" ☆ ベジバーガーの作り方2〜パテとマヨネーズ〜

I'm going to show you how to make veggie pate & vegan mayonnaise in this video:)
change the ingredients and create your own veggie burger!

Ingredients:
For the patty :
150g sprouted brown rice
100g mushroom
200g vegetables
100g soy meat
20g almonds
20g pumpkin seeds
20g soy sauce
5g salt
100g buckwheat flour
For the mayonnaise :
150g soy milk
200g oil
15g apple vinegar
15g mustard
15g maple syrup
10g salt
Instructions:
1. make sprouted brown rice by soaking them for long time. and cook them.
2. toast almonds and pumpkin seeds.
3. prepare soy meat by boiling them.
4. steam vegetables you like.
5. blend all the ingredients for the patty with a food processor.
6. make the mixture into a thin round shape and cook on a frying pan.
7. blend all the ingredients for the mayonnaise with a blender until it thickens.

「材料」
ハンバーガーパティ
発芽玄米 150g
マッシュルーム 100g
野菜 200g
大豆ミート 100g
アーモンド 20g
かぼちゃの種 20g
醤油 20g
塩 5g
そば粉 100g
豆乳マヨネーズ
豆乳 150g
オイル 200g
リンゴ酢 15g
マスタード 15g
メープルシロップ 15g
塩 10g
「作り方」
1、発芽玄米を作り、炊いておきます。
2、アーモンドとかぼちゃの種を炒っておきます。
3、大豆ミートを茹でて、水気を切っておきます。
4、好きな野菜を蒸しておきます。
5、パティの全ての材料をフードプロセッサーにかけます。
6、薄い丸型に成形し、フライパンで焼きます。
7、豆乳マヨネーズの全ての材料をブレンダーやミルサーでマヨネーズになるまで混ぜます。

I first made these burgers exactly as written and loved them, but got a bad MSG reaction from the soy meat. For anyone else who is sensitive to MSG or just wants to avoid it, you could try substituting steamed tempeh. I weighed the reconstituted soy meat (approx. 365 g) so I would know how much weight I needed to substitute for, then steamed one and a half 227 g packages of soy tempeh (cut into small cubes) for about 20 minutes, weighed out 365 g, and used that in place of the soy meat. It worked well! You might need to increase the seasoning slightly to make up for the loss of the flavor-boosting MSG. Thank you for these gorgeous and inspiring videos and the wonderful food, Ryoya!

I love all his recipes, I just have to always try to convert from grams to ounces or cups...hoping that the measurement is right...thats my only hang up, but I SO enjoy watching his cuisines they look delicious

probably not it's about the lecithin in the soy. Soy really isn't bad for you though, it's just this recent fear of GMO soy used to make vegetable oil is scaring people (GMOs are bad for the environment and farmers but not to eat). Lots of soy milk is free from that still since it's not made to be fatty for oil extraction

You are a genius! I want make this now! Unfortunately I can't find soy meat in my country (most of the soy meat here are already seasoned with sugar and all bad stuff) - is it possible tomake soy meat at home - do you happen to know how to do it?😁

serenealh Making soy meat at home is kind of difficult(or I would say almost impossible), gluten is easy to make from bread flour by the way. I suggest to use brown lentils instead of soy meat. texture would be softer than soy meat but it's delicious:)

someone explain for me, please. what happens with mixture soy milk+ oil+ vinegar, why does it become solid?

what i know is that when you mix milk and vinegar, it breaks down the protein.. the milk will become lumpy.. idk if its the same with soymilk and maybe the oil is to bind everything together

crazedanisa really? I never heard of soy meat that contains MSG. crumbled tofu and okara both affect the texture of pate and I think it wouldn't bring good result. it may be a good idea to use cooked grains like sorghum, quinoa instead.

Danisa Mishima I believe is process dehydrated soy. We find it in Asian and Mexican stores.
