Curry Chicken has so many varieties in the region we stay, some thick, some watery, some spicy, some savoury. Ah Pa usually prefers the slightly watery version as it an banjar my white rice very nicely.
Ingredients:
800g of chicken thigh and wing, cut into chunks
1-2 potatoes, cut into chunks
100ml of coconut milk
1 big bowl of chicken stock
Curry Powder:
2 tablespoons of red chili powder
1 tablespoon of turmeric powder
1 tablespoon of coriander powder
1 tablespoon of meat curry powder
Fresh Herbs:
1 tablespoon of chopped garlic
1 tablespoon of chopped ginger
1 tablespoon of chopped coriander’s root
1 tablespoon of chopped or sliced shallot
½ tomato, chopped
Some curry leaves (keep some for garnishing)
Seasoning for Curry Paste:
Pinch of salt
Pinch of sugar
Few drops of Ong Ky premium fish sauce
