I saw some comments about Mama Olga way of cooking pilipino food. For me, it doesn’t need to be the same as what pinoy way to cook or ingredients. Cooking is an art you can create your own and used any ingredients you like. Don’t limit yourself in ingredients what’s in the recipes. Mama Olga cook creatively and I’m sure it’s delicious and I’m sure she’s also suited to thier taste .
she added the potatoes and carrots too soon, she should’ve sautéed the chicken with onion and garlic first with a dash of salt and pepper, it’s the basic thing in filipino cuisine, then fish sauce, then tomato sauce, then bay leaves, then the potatoes, and then the carrots, and also add sugar to cut to the sourness of the tomato sauce, then let it simmer till it’s tender.
I suggested they should see a demo on You Tube first before cooking any dish but they don’t listen. I really resent it when they don’t even do the basic normal sequence of cooking then they call it “Filipino”! If the dish does not represent us, they can just call it “Mama Olga’s Russian Chicken”.
I agree,they added the potatoes and carrots too soon,they should add it when the meat is a about 60-70% cooked,and when sauteeing,they should cover for a while so the moist can slightly cooked it with the soy sauce so the meat can absorb the flavor ,and authentic afritada don't have sugar...they should watch or read the authentic recipe...and covering the pan/wok can make it more tastier and cook faster... anyway Andrei,thanks for promoting Filipino dishes

He was crying earlier (in his high chair off-camera), probably smelling the aromas from the food and wanting some, too! There's your best taste-tester- no filters with Baby Arseny- and he loves it! Andrey, you make the Filipinos very happy. Philippines will ALWAYS have open ars welcoming your family. If I place that Philippines flag in my house, I am afraid my neighbors might throw eggs in my house. Americans here especially where I live in Arizona are not used to diversity. It is better lwhen I lived in San Francisco, California. They might spray paint my property, SERIOUSLY!!! When you go back to the Philippines shortly, I suggest you buy MOM, a wok, we call "talyase".in tagalog. You are allowed to bring home TWO luggages 50 pounds each passenger, right" And also, the wooden long handed spatula we use for cooking. Also, tell Mom or your sister to watch IMPOY'S JOURNEY cooking method. He is a great cook too.

That is good if you saute the meat with garlic and onion first before adding vegetables and add a little water into it boil it in low heat and put also tomato sauce and little suar salt and pepper to taste. I'm sure that would be a great delicious afritada. Thanks for patronizing our dish. Your family were nice!

Kudos to you, guys, especially to your Mom, Olga, for her love of cooking Filipino dishes. However, most of us would prepare our sauteeing to start with onions, garlic, and then the chicken (saute them well first; she can add fish sauce and pepper after the first few minutes of putting the chicken in the saute). Then, add the carrots and potatoes, mix well, let it simmer for about three minutes, and then add the rest of the ingredients, including the sauces. If ginger is part of the ingredients, she can put the diced or julienne-cut ginger first on the saute before the onions or garlic, and then so forth with the rest of the ingredients.

Andrei do some Filipino indoor fun gimmick for your family for them to experience playing it like sandok pera whatever they get it's theirs already. It's good for the whole family bonding. Liza has a good singing voice, she can sing now in a karaoke.

The Philippine and russian flag have the same colors. Mama Olga is so sweet. Ever since she came back from the Philippines she became more smiley and more relaxed. She laughs more and loves being on camera while cooking. I really enjoy watching mama olga.❤❤❤
