Hey Everyone!
I’ve gotten a lot of questions about how I prep my salads on the weekend to set myself up for making healthy choices during the week, with salads that stay fresh for 7 days. I use Ball mason jars in the quart size to make these salads with loads of fresh fruit, cruciferous vegetables rich in cancer-fighting sulferophane like broccoli and red cabbage, and anti-cancer powerhouse mushrooms. In this video I explain the order which I stack these veggies in the jar, which consistently keeps them fresh for me for up to a week, and the way that I serve and dress them at work.
I follow a bright line eating (no sugar, no flour, measured meals, mealtimes) philosophy and a whole food plant based diet to stay healthy and trim. I designed this meal plan with the vegan, WFPB and nutritarian principles explained in the books “Eat to Live,” by Dr. Joel Fuhrman (the salad is the main course!”) and“How Not to Die” by Dr. Michael Greger. This salad hits /12 items on Dr. Greger’s daily dozen in one meal!
Each salad includes:
6oz fruit (pineapple, blackberry, blueberry, peach, strawberry, grape, kiwi)
12 oz mixture of baby spinach, broccoli, red cabbage, onion, mushroom
Dressing: Applied right before eating = 1 tablespoon oil (I love olive, walnut, flax seed, or sesame), 2 tablespoons tamari sauce (gluten free soy sauce) or choice of vinegar

As I approach my goal weight I’ve needed to tweak the above a little to keep up my weight loss. The last few weeks, I’ve been eating 3 of these huge salads a day and an absolutely enormous (I.e. 15-20 oz) serving of homemade sauerkraut. I’ve found that as there weather gets nicer and produce is getting more varied and abundant at the grocery I’ve been really craving lighter foods and fresh salad. When I hit my goal weight, I’ll be transitioning back to more frequent beans and starches like rice, sweet potatoes, yams, etc.
