This is a universal video that shows you step by step about how to fry a skin on fish fillet from fresh. We used a small portion sized turbot fillet for the video but the principle would apply to sea bass, sea bream, plaice, lemon sole and many other types of skin on fish fillets. So just remember, hot pan, season the flesh with salt, in the pan skin side down, flip when cooked about 80% of the way through, rest for two minutes then take pan off the heat.

If you serve the cooked fish skin side down the skin won't be crispy anymore by the time it hits the table. Keep the skin up to keep the crispiness, and serve any sauces on the side or under the fillet. Pouring sauce on a crispy skin in the kitchen will result in a soggy skin by the time it hits the table.

I would never cook a fish this way. There is only a little bit of oil in the pan, mostly around the edge so the fish went in with none under it to even out the distribution of temperature, which is why the browning was uneven. That means the cooked texture of the fish would be uneven. I see no need to use a 'non-stick' pan either. A well seasoned pan with clarified butter or misture of butter and oil will produce a far better result.

Say I don’t have olive oil. Is there a substitute that is appropriate? Would butter be better than canola or vegetable oil?

Butter will burn. Use oil. If you want butter add it at the end.
