▽Ingredients
100ml Heavy cream
10g Brown sugar
80g Boiled Azuki
100g Shiratama flour
50g Brown sugar
5g Matcha
160ml Water

Here are some tips from someone who tried it herself: - the mochi "skin" is great, really chewy, nice texture, tastes great. very few changes to make, but for me personally, I like to reduce the sugar, so that's what I did, but I also increased the amount of matcha by twofold, just to get that nice, deep matcha flavor. (It's totally optional tho) - when working with the "skin" be aware that it is REALLY STICKY so make sure to flour your surface and your rolling pin really well. - the filling is really good, but I added some matcha to the cream (you can tell I really love matcha) - a problem that occurred with my filling was that I used a homemade red bean paste (boil some adzuki/red beans, blend it in a blender with a bit of sugar, reduce over low heat with some coconut oil, chill), which has a really low moisture content. and has coconut oil in it, which hardens, so freezing it along with the cream made things difficult. So either you could eat it with melted ice cream and nice adzuki paste, or have good ice cream and really hard adzuki. My suggestion is to simply pipe out the cream and freeze that, then when wrapping it, add some fresh adzuki.
