Fermentation and sprouting are very common practice in traditional cultures, in South East Asia and all poor people do it to preserve food and increase amounts of food. I do sprouting and fermentation more than 30 years learned from maternal grandmother in Babylon ( Now Iraq).

I've been hesitant to start sprouting because of the cautionary talk about potential bacterial issues from the water. But if poor cultures have been commonly sprouting in what I presume are environmental conditions where water probably isn't typically great, I'm probably being way too overly paranoid. Or am I?

@@HidingFromFate I use tap water which contains chloramine to grow sprouts, so I figure it deals with the bacterial issues so long as I do not leave them sprouting for too long.

Thanks to Dr. B for information on steaming some of our daily vegetables for more carotenoids, adding avocado to salad for fat soluble vitamins, and sprouting and benefits of fermented foods. 👍

I always try to be a voice of reason, and evidence based commentary;) I would have become a doctor, but I just DIED inside, when I saw the hours I'd have needed to put in during the residency. 12 hour work day is my limit! So, kudos to you for having the drive and stamina to stick out those draconian hours. You're the best, man:) A real hero.

Hard to think that these two guys haven’t heard of Dr. Goldhamer’s work at TrueNorth. My mother and I spent 3 1/2 weeks there with great results.

I microwave kale for 2 minutes as preparation, and usually eat 2 ounces. I just add salt and it's perfect to me. In addition, I will add it to a whole can of beans, add a small amount of garlic and microwave it all for about 3 1/2 minutes. I enjoy that quite a bit and will eat it daily. I'll add pasta to that on some days. Usually anywhere from 3 1/2 to 8 ounces measured dry. This type of meal is so simple to make imho. Of course, the pasta has to be cooked beforehand with water, but I find that very simple and quick. I hope you all consider trying this meal. I will try lentils and possibly eat those in a separate meal while cutting back flour products, which are processed to a degree. Maybe.

Okay, love Dr B but calling BS on his “they never achieve satiety because they are eating empty calories” when discussing NFL lineman eating chicken wings. As a former college football player, I’ve eaten many chicken wings and been satiated. I’m currently plant based, but I did try carnivore last year, and it was very satiating. He’s missing the fact that those guys are burning legendary amounts of calories everyday with workouts and practices. They need to eat ridiculous amounts of food to maintain their bodyweight. I was on a 5000 calorie at the minimum to maintain my 185 lbs. Eating was a chore. The idea meat isn’t satiating and is void of nutrients is silly at best, especially from a Dr. Do better please

Missed the "live" but enjoyed the replay a couple of hours later. Nearly lost my sparkling water across the keyboard when Dr Will said he's a big bowel movement kinda' guy. lol I have his 2nd book and recently got a boatload of cabbage to start making my own kim chi. I plan to make the lowest sodium version I can manage. Already doing sprouts on a regular basis and beans of all different kinds are on the menu pretty much every day. Life is good!

Don’t go too low in sodium when making kimchi, as it can lead to growth of harmful bacteria. There is certain threshold for salt content for this and you should stay above that.

Dr William Davis is dropping bombs on YT about wheat and grains being very bad for you as well as saying the prep liquid you need to take before a Colonoscopy wipes out your microbiome, putting fear into people who need these procedures done, yet he doesn’t then say what we should do to build up the microbiome when you need to have a colonoscopy. Can Dr B way in on this, any thoughts ?

sauteing lightly in olive oil and then consuming that along with the vegetables.... monounsaturated fat plus the nutrients released all get into the diet.Very different from deep frying

I took the first masterclass that doctor B offered several years ago. Shortly after, had a client with extreme gut pain for 11 years. I helped her totally reverse it within 10 days thanks to the info received at dr. B's course! He's always a wealth of good information with great delivery. Thanks to both Chuck and dr. B for this presentation. I didn't think there was still something I could learn--but, indeed, picked up a couple geat tidbits of info today! 😅❤

True North has been doing prolonged water fasts for 35 years. There are the studies. Over 20,000 people helped. Google Dr. Alan Goldhammer. Also a plant based advocate.

Dr Will Bulsiewicz, You are not understanding ketosis. 50 pounds of fat was burned as energy by the body and 50 pounds of fat was wasted as ketones in the absence of carbohydrates. So up to 50 pounds of fat loss in 40 days for energy and 50 pounds of fat as ketones exhaled, urinated, persired etc. Doubt he smelled well and he may have slept more than usual (or not). In ketosis 2 fat carbons are burned in the ATP cycle and another 2 fat carbons are wasted as Ketones if I remember correctly. Back in 20054 I used to go for a 15 minute walk at 3 pm and eat a palmful of flax seed for a snack aferwards (drinking water too) and lose 4 pounds a week. Water helps split the bonds during fat burning if I remember correctly. If there is abdominal fluid retention (ascites?) some weight loss could just be water. In addition eating grains would retain some water in the GI tract. Any time I fast there is less food in my gut and for me it can be as much as 5 pounds rebound. Another 5 pounds can be retained by salty foods and raise my blood pressure by up to 20 mm Hg verus no salt. I am 6 foot 2 inches and would be thin at 175 to 185 pounds. My recent hospital stay, I fasted for 46 hours and my urine was dark and smelly. Doctor put me on saline solution drip - 40 years ago I would have broken my fast after about 30 hours because of a headache. This time no headache because of the saline solution, yet my Doctor asked me to start eating again because of low albumin (protein) in my blood test and I needed to heal from surgery. Might be hard on the kidneys (maybe only for Chronic Kidney Disease sufferers?). One of the online Intermittent Fasting/Keto promoters suggest taking his low carb electrolyte powder. Cyrus Khambatta and Robbie Barbaro of Mastering Diabetes recommend intermittent fasting as part of their Whole Food Plant Based road to reversing Type II diabetes and lowering insulin requirements for type I diabetics. I have been whole food plant based since November 2020.

As a SAD eater I ate a huge volume of unhealthy food at every meal. As Chuck commented changing eating habits is extremely hard. Now as a WFPB eater I still eat a huge volume of food but I need to cut down the volume. As Dr Bulsiewicz says such volumes are not normal.

Can someone please discuss overcooking cruciferous vegetables? In Childhood I could not stand Brussel Sprouts, because my mom prepared them the way my dad was used to... 45 minutes, till brown.... (and stinky) By accident I prepared them once, cooking only for 5 minutes and (WOW) they were delicious... What does this mean nutrition-wise?

I was slender when I water fasted 42 days on water...I became emaciated...slowly gained back weight to my normal weight...I lost muscle but gained it back. I cleared a skin condition for good. My diet was healthy before and after...mostly raw...nuts and seeds and fruit w some cooked grains. Fermented veg will raise bp...too much salt.

Fascinating! About the water fast… i’d have to disagree with Dr. B. Did a 72 hr water only fast and I did not have any bowel movement till I consumed food on day 4. It was strange not having to go to the restroom in that way, but that’s also maybe bc I had a terrible microbiome. Maybe if I went longer I would have that movement? I did get terrible symptoms, water the instant I’d drink would come up, weird heart palpitations, cold sweats, lethargic, but heightened sense of smell and better sharper eyesight. On a juice cleanse, on the other hand…

Without adequate salt, harmful bacteria also grow during fermentation, so there is a threshold salt content requirement below which one should not ferment.

The lady who wants to stop losing weight should have also been advised to eat more calorie dense wholefoods like beans, grains, lentils, etc. rather than olive oil. And healthy wholegrain bread with seeds and peanut butter, etc. Olive oil isn't just fattening, it is unnecessary. I hope Dr B will not feature olive oil in his next book, it is so easy to get used to cooking and eating without olive oil, and very few people need to put on weight in this world.

Also potatoes (without fatty toppings) are good candidates as relatively higher calorie density foods in plant kingdom (although they are not as calorie-dense as animal products or nuts).

Question. I have been plant based for three years. Mainly raw, however, still consume cooked vegan foods. Now 64 years old, family and friends believe and say I should be more concerned about my protein intake and all the required amino acids. I am very active. Resistance training a few days a week. Do I need to change, add, or adjust my vegan approach? Trying to adhere to Dr. Graham's 80/10/10 with a little cooked vegan foods infrequently. Thoughts? Opinions? Concerns? Thanks. And, keep up the great videos.

Dr B, curious your opinion on organic raw cacao nibs/powder. I take 2 tbsp daily in a stainless tankard of coffee. Also avocadoes. I know how plant-based advocates often frown upon any saturated fat, even plant-based (see coconut) . I get a little satfat in per day through that, sometimes a serving of walnuts/pecans, goat cheese, and small amount of butter. Everything else is no or very low satfat with lots of whole fruits/veggies, only whole grains, and fermented foods. I’m about 5’7” 168lb age 41 and basically stay within 5 lbs of that year over year with all my numbers in a “normal” range. Typically two full meals (lunch and dinner - dinner is just big veggie salad every other day) daily. Thanks.

When I was 30 YO (a long time ago), I drank water and a soy-based protein shake three times a day. I did not eat food and I lost 10 lbs/month. I did this for three months and lost only 30 lbs. Was it healthy no, but I was young and stupid.

Gluconeogensis converts both fat and protein to sugar during fasting. I loss 50 pounds in 10 months back in 2021 and needed to rebuild muscle afterwards, but also reversed type II diabetes and hypertension. Could have done it in 6 months but I would eat several pounds of nuts some weeks. An ounce a day of nuts or seeds would be all that's recommended while on WFPB-SOS diet and trying to lose weight.

Don't you need a BALANCE Omega 6s versus omega-3s in a normal diet - one that is mostly free of industrially or commercially processed foods? Also don't you need mono and poly unsaturates to keep saturated fats in check?

Oxalates are generally metabolized by gut microbiome. But one should be careful not to eat high oxalate foods, such as spinach, too much.

Pretty bad! Diet soda was a hard one for me to give up too so I relate. I've been off it for 2 years now though so it is possible! One thing that helped me cut down was using sparkling water with a little squash - then when ready, sparling water only. I made the transition over about a year or so it could take some time. Good luck!

Olive oil is highly processed and stripped of nutrition. It is essentially all fat. Yes, it's better than saturated, but one should get their fat from real food like avocados and nuts. Disappointed to hear it offered up when it is, by definition, not a whole food. Dr. Greger is a better source of information on this subject. And yes, it's better than butter. But tell people the truth. It's not good for you either. "Better than" would justify eating chicken over beef. See the flaw in the logic?
