as for the lentil ragu: it was a real game changer not only frying bay leafs in sauces like this for a bit before adding the rest but also the tomatoe purree/paste transforms everything when fried in the oil, dissolving into a beautiful orange oil situation packed with flavour

This is really great! I was recently diagnosed with iron deficiency anemia and am trying to increase the amount of iron-rich foods I eat but don’t eat red meat. Turns out tofu, beans, lentils, and leafy green vegetables like kale and spinach are great sources of iron but eating them with dairy makes the iron indigestible, so vegan curries and stir fries are really great for me! Several of these looked really great and I can’t wait to try them!

I've been making your lentil ragu for years, although lately I prefer to use crumbled Beyond Meat patty instead of the lentils, it's pretty amazing in there :- ) I really need to up my tofu game and try that cornstarch method, one time I used tapioca starch instead and that was a no-no 😅
