Hi, TJ! This looks delicious! I think that using a dry rub in both the meatloaf and filling is a great idea. So much flavor! I have never had roasted poblano peppers, but I am sure they added a ton of flavor. You did a great job with that bacon weave. Seeing the cheese ooze out was pretty cool! I would normally cut the edge of the meatloaf as well, but like you said, you have to cut the middle for the video. What a great cutting! Wow, this turned out great, TJ. Thanks for sharing!
That oozed out cheese did not go to waste, I ate that right up while no one was looking. Poblano peppers are great when roasted, you definitely need to try it. Every fatty did look good. I've never seen a pork loin like you made, that was pretty good looking. I made one before that was just breakfast sausage rolled in bacon, I was not a big fan of that. I know your family went nuts for this! Its funny how language changes, a fatty was something else entirely when I was growing up😅😳 It definitely looks killer though, I thought you lost more cheese, but when you cut it open all went well. I'll be checking out the other videos too. Another winner TJ.

I love your meatloaf. 😋 I was thinking that since I often have pimento cheese spread in my fridge, that it would make a great filling for this meatloaf.
