Mediterranean Farro Salad

How to make Mediterranean farro salad

Ingredients:
1 cup uncooked farro, rinsed
2 quarts water
1 shallot
1 cup chopped cherry tomatoes
1 cup cucumbers
1/2 cup Feta cheese
Dressing:
1 cup olive oil
2 Tbsp balsamic vinegar
1/3 cup lemon juice
Pinch of salt and black pepper
Crushed dried mint leaves, about 1/8 tsp
Directions:
Add 2 quarts water and 1 Tbsp salt, bring to boil
Add 1 cup rinsed farro and boil for 30 min or until softened to your liking. Drain excess water and let farro cool to room temperature.
Add chopped veggies.
Mix all the ingredients for the salad dressing and pour on top of the salad.
Mix in feta cheese.
Enjoy!
