I'm two months into Mediterranean cooking and love its unapologetic nature. By that I mean after mastering a few simple basics comes with it the freedom to explore based on one's own preferences and ingredients on hand. This is lovely, btw and I can't wait to make it.
For me it's the colours , freshness and taste - holidays on a plate ! I'm eating more blends of herbs and spices, my cupboard is full of them . I always disliked spicy food , I think what I meant was firey hot spices not the warm fragrant spices. I'm wary of using olive oil as I'm losing weight , so I use a spray olive oil instead - not the nasty 1 calorie stuff. I've eaten like an emperor this week - fresh chicken , fish, salads , couscous, zero fat Greek Yogurt , fresh fruit and lost 2lb . Good freshly prepared food is the key ❤
@@pearlsaminger9544extra virgin olive oil is a healthy mono-unsaturated fat. The virgin part just means the *first press* of the olive, so it’s less processed than plain olive oil. It’s *saturated fats* like fatty cuts of meat, butter, lard, cream & so found in foods like biscuits & cakes), that you should wisely try to limit.
Looks great! As I have a family history of Cancer I'm always looking for meat free, dairy free and eggless recipes as I need to avoid the DDT and IGF-1 in meat, the BLV and estrogen in dairy and the lead and choline in eggs. Thanks so much for sharing

Snap, this is a " must try" ... I use butter beans and cannellini beans in salads for fibre , I have even thrown chia seeds over salad for the health benefits and they're so tiny you don't really notice them . Lentils will be good to try I think.
OMG this is soooo delicious! I was in a hurry before work and I forgot to add the herbs, but even then, it is such a wonderful and refreshing salad! I will make sure to give myself more time and add the herbs next time around haha

My partner is Greek he'd definitely agree with you about the salad , it must have loads of feta sprinkled on it 😂😂. He took me out to a beautiful Turkish restaurant we both left very full and happy , we both said the flavours were amazing, I've had Turkish food before and it was good but this was exquisite.
When using your knife to move your chopped herbs to the side of your board, refrain from using the cutting side of the blade, but flip your knife and use the opposite side as you won't #1 dull your blade and #2 damage your blade.
you could do finely chopped cabbage and carrots I suppose and maybe add some other herbs to make up for the list flavor if the peppers. I'm sure it will still be good. (Also if you're concerned about lectins you can soak the lentils overnight before cooking them. It helps remove them . or so ai have read!)

It was flat leaf parsley. Looks like cilantro but is not. Flat leaf parsley (also called Italian parsley) is what you buy dried. Has more flavor than curly leaf parsley. (Edited to add: It could be cilantro I suppose, but she calls it parsley, the recipe on the website calls for parsley, and it looks like parsley 🙂)
