If you bake it in a shallow dish, you can have twice as much crunchy topping.

My husband lived in Savannah Georgia as a child. He grew up eating Dukes. When we'd go back to Savannah to visit family, I'd buy a jar for him because it wasn't sold where we live. It is now, but I had more fun buying it in Savannah. It was a special treat for him.

Oh Miss Meme! This is my grandmother's recipe to the nth degree, but with one Texas twist. She always added a can of diced green chilis to give it some Texas flavor. This is a keeper, diced green chilis or not! You go girl!

Mmm!! I love me some squash casserole. Loved hearing your "A Trained monkey" story. It puts me in mind of my ex's grandaddy years ago. They lived in a small....southern town and they didn't eat out. Like ever.They may have been to a little country breakfast diner before, but that's about it... well one day there was a storm and the power was out, and btw, this was around 1986 . We lived just across the creek from them and we decided to meet up at the local Hardee's. I walked in and he and nanny were sitting at a booth. I could tell by the look on his face that he was a little more than upset. I walked over and asked him what was wrong and he said I don't have any time set to come back here. We are starving and these young people just keep staring at me and nanny like there's something wrong with us, i said grandaddy, you have to walk up to the counter and give yours and nanny's order and they will either give it to you or you can sit down at the table and they will bring it to you when its done. He said i have never heard of going out to eat for you to have to go stand at a counter to order your food. No wonder we don't go out to eat!! I laughed so hard, to myself of course! You remind me so much of my granny and the way she cooked. I loved going to her house on Sundays and having Sunday lunch with her and afterwards we would have homemade ice cream. She made some of the best sour cream squash and biscuits and roast beef and gravy. I love memories like that. My daddy just passed away a month ago and the jokes and stories he could tell. I was disappointed that our grocery stores haven't carried Vidalia onions this year. Maybe next year? I'm only about 1000 miles to the west of GA. We have most major grocery stores here in our medium-sized town. Anyway, I am very grateful you gave the tutorial on cooking squash because I think it might be how my sister makes hers but she wouldn't tell me how she does it. Her squash is absolutely to die for it's SO good. I bet yours is too & maybe even better with the addition of Vidalia onions. Thanks, Me me!

What I love is that so many of them are quick and easy with no fuss and most of the items are already in my pantry. Great easy recipe! I usually throw in veggie powders, fresh or dried herbs…lots of freshly ground black pepper and will add Mayo and some sour cream. I use Panko bread crumbs! I make enuf like you….to serve one dish and freeze the second dish. Great to fall back on it…..on a lazy day!! Thks so much MeMe! Ahna

We LOVE YOU MeMe!!! My wife and I love all of your videos and I just wanted to update you on a few things... First is my favorite dish you make is the Bacon Cheeseburger Casserole!!! I can't get enough of it !! Second is after 66 years of using Hellmans Mayonnaise I have officially switched to Dukes Mayonnaise. We have been living in NC for 8 years and Dukes is the "Mayonnaise of the South for sure!! Thanks for turning me on to it. Finally, we have your first cookbook and love it!! Oh MeMe I just love you so, my Mama was raised during the great depression in Texas, I noticed that in you nothings goes to waist, I remember her being in the PTA growing up, and any time the had a function (Pot luck) I always remember her making casseroles, rice salad, and always her beans with ham hock that were always requested, please continue doing what your doing, you've brought back a lot of precious memories.
