I wouldn't expect MTBers to be too familiar with cheap road bike technology, but what Blake and Rich referred to as "cantilever brakes" are actually single-pivot caliper brakes.

Haven't even seen the video and already gave it a like. Edit: Obvious guest suggestions for this kind of challenge would be Sam Pilgrim and Matt Jones. Maybe take the kids bikes to Matts playground, once the weather dries up?

I think that Sam Pilgrim and Tom Cardy are two excellent choices for guests for the next kid's bike challenge, but I think it should be at an urban setting, with more trials and jibs involved. But another suggestion would be a Rampage or Deathgrip challenge with Ollie Wilkins and Brendan Fairclough. Possibly throw Bernard Kerr in there for good measure.

I think the next challenge should be an unlimited customization challenge where Blake, Neil and Rich have ability to take the bikes and do whatever they can to add parts and pieces to make them better and repeat the challenges.

I tried to frontflip my childhood bike by loosening the bolt on the front cantalever brake so it moved off the rim and gripped onto the tire instead. Serious stopping power but no modulation it was either on or off. You got about 1 second or so from pressing the lever to being chucked over the bars.

At 1:07 and 2:24, those aren't cantilever brakes, they are side-pull caliper brakes. Cantilever brakes mount on a pair of posts that are attached to the fork (or to the frame for rear brakes). They have two separate arms that are pulled in unison by a straddle cable. V-brakes use the same mounts but don't need a straddle cable. Also, the term "mini bike" is already spoken for, and it doesn't refer to kids' bicycles, nor even to pedal bicycles of any kind. It refers to a small off-road motorcycle, like the one in the movie Dumb and Dumber (1994). Wikipedia even has an article about them.

At least we know that Doddy's job over on Tech is safe, Blake couldn't spot he had 12" wheels (suppose size is relative...) and neither Blake or Rich could identify a caliper brake over a cantilever 🤣 Blake wins the bravery award though, riding like that on a plastic headset designed for kids the weight of his left leg is definitely foolish!
