How to make miso salmon:
We take 2 cups of miso paste, mix with 2 tablespoons of mirrin, 2 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of rice wine vinegar, 2 tablespoons of sake (optional).
Mix these miso ingredients well. Pour over salmon fillets to marinade for 1 hour.
After miso marinade is done, wipe off most of miso and place salmon in a pan. Put under a hi heat broiler for 7-10 minutes.
To make scallion soy glaze, take scallions, 1 tablespoon soy sauce, 2 tablespoons honey, 1 tablespoon of the miso marinade and bring to a boil. Reduce over medium heat until your scallion soy sauce turns thick into a nice soy scallion demi glaze.
To finish miso salmon with soy scallion glaze, you can either use togarashi spice or nori furikake. I have finished two different dishes so you know what they look like.
