Look, I just stumbled across waaaaaaay too many apples to do anything but bthis recipe, but it seems waaaay better than the other recipes I have found, using store bought apple juice, or bread yeast
Just did this and used an airlock filled with vodka because pesky fruit flies have been scootching into all my fermentation projects lately. Can't wait to try this!!
Hi Doug & Stacy...Stacy, I so enjoy when you share your recipes. This is such a good idea. I will definitely make this. I want to share something funny with you. A number of years ago, my father was starting to show signs of arthritis. I looked up a home remedy which said soak raisin in gin and after a month take a tablespoon of raisins every day and it should help ease the symptoms of arthritis. I made it and gave it to my dad. After a few weeks, I asked him how it was working. He said...and I quote... “Well, I don’t know about the raisins...but the gin works great!!” LOL!! Too cute!! Thanks for all you share!! Fermented apple juice and raisins is also known in some parts of the world as "calvados". My recipie is 1 gallon of pure apple juice with 1 lb. of raisins and no added sugar, put in a jar in a dark place for a few months.
I made 2 gallons 6 months ago, adding some cinnamon sticks and just opened them up. Tried a little bit and it is great! I’ll be making this from now on instead of buying high priced wine. I also used golden raisins and brown sugar. Thanks for the recipe!
Hi, seeking answers....I made a gallon of this. I'm not sure how it's supposed to taste. Mine taste a bit fermenty with a slight alcohol kick. If this is good I'd love to know how and when I could add spices. I'm really struggling to find answers to my questions.
Mine were too! My tree is only like 4 years old and I got almost 3 bushel of apples this year. More than enough to spare and share and use a multitude of ways!!!@@laurel7175

I made this recipe . I followed all steps except I used a nut milk cloth for straining the mixture. I got a really nice tasting apple brandy, ( reminds me of plum wine that is served warm in some Asian restaurants)that we love with my husband!! Thank You Stacy so much🫶
I LOVE this instructional video! Thank you so much. I just bottled mine made 6 months and one week ago. It is delicious and packs a punch. My only problem is I didn't make enough, ha ha. This coming week I'm going to start another batch - making MORE. We have a family and friend camping out reunion/gathering every year in April or May; I'm excited to have some to share there in 2024. Found two of the big jars at a yard sale this past weekend for a quarter. I literally squealed and the lady thought i was nuts to be so excited about glass jars lol Now we have sun tea and hay makers punch in the making :)
LOL we use to call that applejack when I was a kid. I have seen people run it through a mill or a blender before fermenting. Good stuff! But I prefer watermelon wine myself, another throwback to my early years. 8-)
Darlin, what you're making is good ole Hard Cider. On a cold winter's night, it doth make the heart merry. Gifting it is fine, just don't sell it. In my neck o the wood, that'd make you a "Bootlegger".

Lol. Oh dear! I actually covered the apple slices with the raisins and then well covered in cane sugar, pounding after each layer. I covered the gallon jar with a gallon freezer bag because I don't have plastic wrap. But I wonder if one can over raisin ( used 2 #'s) and over sugar it???I hope not! 🤔 Brook 🙋🍏🍎
NO wonder you guys are always so happy! I think its called 'hard cider'. By letting wine ferment until its done can make some strong stuff, upwards of 30% alcohol.

So you've made this before? I assembled my jars about 5 days ago and the book is now being lifted up by the plastic wrap bubble that's growing. Do I need to burp them? My house usually stays around 80 degrees this time of the year. I hope it will be okay in the cupboard. I can't find any advice on this method. Every thing I read about making hard cider is made with juice only and not whole apples. Any information you have would be so welcome. Thanks!!
Your rooster is working hard to keep his hens safe! I love my roos! They are funny. When I take kitchen treats to the hens, the roo always loudly tells his girls, but he does not take any until every hen has her treats. We have hoops made from cattle panels, partially covered with tarps. They are 20' and 25' long. Snakes are always a problem. So I wrap bird netting around the outside of each pen. My husband does not like it, because he feels sorry for the snakes, but we have caught four copperheads in the netting this year...so far.

I love finding new plants that you can utilize the whole plant and I just ran across (I'm probably the last one to know, like always. Lol) the Hyacinth Bean, by actually looking up the best flowering edibles that humming birds will enjoy too. And boy oh boy, it looks and sounds like I've hit the jack-pot!! They are gorgeous! So if you have any experiences with them please let me know and if not, PLEASE check in on it?! I found only one out of 5 sources that said anything about the bean having to be..."that triple boil" step sorta like poke weed. So I'm going to continue with a bit more research. So my suggestion concerning the plastic wrap is not meant to be critical in the least. But for those who are troubled by it-I read an article about using parchment paper. Cover the jar opening, with the paper, and then add the lid and ring. The parchment paper will keep lid and ring from corroding. Blessings!
Oooo...a neighbor just gave us 2 five gallon buckets full of apples! I already made 750 ml of Apple Cider vinegar and it’s aging right now. I was wondering what I was gonna do with the rest of the apples and I don’t want them to spoil. But now they can spoil productively and, if I don’t like the drink it can still become vinegar! Hi Stacy- will the type of apples effect the final flavor? Meaning, do sweet apples like red delicious make a sweeter finished product? Same question regarding sour apples. Anyway, congrats on approaching 200k subscribers. I’ve been here since about 25k. It’s amazing how you keep humming along and growing. Always great content.
The apple cultivar will affect the end flavor but yeast will consume whatever sugar is available. Sweet apples have more sugar, hence will make more alcohol. Tart apples (less sugar) will generate lower amounts of alcohol. If you're a serious wine maker you will test starting sugar levels and adjust your fruit must prior to fermentation to give you the alcohol levels you want in your final product. If not all sugar is consumed then your resulting wine will be sweet. If all of the sugar is consumed then the resulting wine will be dry.

I made a small batch. Started in October and bottled it a few days ago. It is delicious. A little sweet but very subtle flavour. I just a found an organic orchard where I can pick my own apples. So I am going to make a much larger batch ready for Christmas 2023. I have a question too: will this work with just pears? Or is a mix of pears and apples necessary. I have researched this but found no reference for making a pear brandy except with a still!
why not use a silicone pickle pipe type topper as opposed to the plastic wrap and a book? do you want no air, a little air or just no bugs or ?? I've started my jar about a month ago and it's brewing, it's a cool experiment but I have so many questions.

Hi The Frustrated Gardener :) It's a lovely spirit made from rye whiskey, cherries and sugar. We make it every summer and we leave it sitting for a minimum of 3 months and it smooths out so nicely! Can't keep the Mason jars full of that stuff! :) I actually originally saw Cherry Bounce on the television show Moonshiners. Since we don't have a still...and it's illegal (!!), we found a recipe on Imbibe Magazine's website: imbibemagazine.com/cherry-bounce-recipe/. I'm up in Canada and we don't have fresh local cherries here, so each June when the Washington cherries are in season and in the stores, I watch the prices and load up on them when they hit 1.99 a pound at the market. It's not cheap though, you need a quart of rye whiskey for it, but we find it's worth it! :)

Rain Frances...the recipe link you posted says it lasts up to two months. Have you ever stored any longer than that? Not sure I would be drinking a quart of it in two months. Thinking to half the recipe.

I followed this recipe, but ahha, putting the two 1/2 gallon jars in a dark place with books on top, Low and behold, they overflowed all over the top where they were. My question. Do I take the tops off and replace sugar, fluid.. or what trouble shooting would you suggest? I've left as is. This recipe was finished, two more layers of recipe and put away about 5 days ago.
