THE FOUNDATION:
▪ cookies - 100 grams
▪ butter - 50 grams
CURD LAYER:
▪ cream cheese - 350 grams
▪ Greek yogurt - 200 grams
▪ condensed milk - 200 grams
▪ lime - 1 pc. (you need lime zest and juice)
▪ food coloring green - optional
▪ mint - 10 grams
▪ gelatin - 15 grams
▪ water - 50 ml

WE PREPARE:
0:00 Start making the mojito mint cheesecake.
0:05 Pour gelatin with water and let it swell for 20 minutes.
0:14 Place cookies in a blender bowl and grind them into crumbs. Add melted butter and chop again.
0:31 Line a 21 centimeter (6 in) baking dish with parchment paper, line the cookies and spread them evenly over the bottom of the baking dish, pressing with a glass. Remove the base from the biscuits in the refrigerator for 20 minutes.
0:47 Tear off the leaves from the mint and grind them in a blender as fine as possible.
1:01 Place cream cheese, Greek yogurt, condensed milk, lime juice and zest, and a few drops of green food coloring in a deep bowl. Grind all ingredients with a blender.

Add the gelatin melted in the microwave, beat with a blender for a few seconds so that the gelatin is evenly distributed over the curd base.
1:46 Pour the curd layer into the prepared mold and refrigerate for 3 hours.
After 3 hours, gently remove the cheesecake from the mold, carefully remove the parchment paper, cut into portions and enjoy.
