Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

On our most recent trip to California, we were fortunate enough to experience sushi on the West Coast and at a very high caliber.
On our first stop, we visited Mika Izumisawa, Chef and owner of 242 Cafe Fusion Sushi, located in beautiful Laguna Beach, California. Standing looking out the front door of her restaurant, you're looking directly at the beautiful beachside where it reminds us so much of Ocean Drive in South Beach; there are people in the water, people sunbathing, playing sand volleyball, and people just watching other people. This place is paradise.
Miki worked under the care and direction of Nobu Matsuhisa at his Hard Rock Hotel in Las Vegas for a year. There after, she decided to leave and relocate to Laguna Beach where she felt was a better place to live and work and with hard work and dedication, opened up her own restaurant, what is known today as 242 Cafe Fusion Sushi.
If you're expecting to get some run of the mill sushi that you could get anywhere, you may want to stop a moment and plan to stay for a while. All of her dishes are so well thought out and designed, she could give you a 5 minute description on how she came up with this dish, and what her inspiration was.
We have never experienced these types of textures and tastes, and wondered why her creativeness hasn't been duplicated by mainstream sushi restaurants yet, but the reason why it hasn't can only be explained by saying that her dishes are so unique, if you tried to copy some of her original creations, you would be known as a fraud and word would get out.
If you are ever in this part of California, we highly recommend stopping by and visiting Miki (pronounced Micky) and enjoying some of her unique and delicious dishes and 37 different sauces created only here. But don't go too late in the evening or you'll need to wait for a seat. We enjoyed it so much that we'll be visiting again next year.
Whenever we travel outside our hometown of Miami and we visit a well known sushi restaurant that we feel our viewers should know about, we will be there sharing all of our dishes that we enjoyed that evening with all of you.

I'm enjoying getting to watch other chefs work with different ingredients - as well as seeing everyone elses knife cutting techniques , thank you for this. Watching these chefs and comparing myself to them might get me the confidence to start my own business one day

Wow, this was exceptionally pleasant to watch, thank you NoVe guys. Much details in food there one can see their commitment(a lot of ingredients). Chef Lizzy have skills that's for sure, and good looks but, I think Hiro-san is master sushi artist. great great video, thanks.

She rolls withOUT a cling film, she's squishing the rice and that partially ruins the roll itself. She's just using the cling film to finish it up. She canNOT be compared to Hiroyuki.

I've heard about her sushi and her store. She opened up the shop as a fusion type sushi with her special sauces she came up with to suit her dish. So lucky, I hope I can visit Cali and try her sushi

Thank you so much for this video, i saw the crew working there in another video before and also enjoyed this one. When Lizzy was filling the first role, I was certain it would be overfilled and couldn´t be closed properly ... and then she perfectly roled it up ... with her hands :D I tried it a few times, but still it´s very difficult for me, I always gotta use the bamboo mat. Yet a lot to learn :) I would really like more videos about you visiting other sushi restaurant and explore their menu. Only one suggestion: Could Hiro try to explain the taste a little bit more after eating? Would be really intresting. Though Mr. cameraman is always asking good questions. Keep going!

My first thought was OMG sacrilege, how can you drown something as simple and plain as sushi in so many different flavours. On second thought though, I think it's a wonderful idea - they are not in Japan (where something like this just wouldn't fly) and why not combine the best of both culinary worlds into one seriously delicious meal? Thanks for broadening my horizon with this video!

Thanks for sharing the link, It was very interesting. Some of her other dishes are really beautiful as well as those you sampled. Shame you didn't get to try more while you were there. I like how there's a story behind the Laguna Canyon Roll. I still think it'd probably look a bit better without quite so much salad, but I like how she uses her dishes to represent things, and I really liked her idea of creating sauces to overcome the tendency of people to drown everything in soy sauce. Makes me wish the UK had more sushi restaurants outside of London.

I actually prefer Hiro's way of cutting, the woman does it way too fast and you can kind of see it getting misformed. I'd rather cut it carefully into nice equal pieces instead of going as fast as I can.

Hi Hiroyuki. That's a really good little camera the RX100 M series. So you use it for video that's cool. Well, if you need anything else, like an extra battery, tripod, monopod, wide angle lens, filters, etc etc let me know. There is a ring adapter that adheres to the lens on that camera that allows adding of close-up lenses, telephoto lenses, etc.. Happy Holiday!
