This homemade (and homegrown) goat's milk caramel is such a game changer for my every day cup of coffee!! This is a great change that the 50 Dollar February Challenge has had me making. The recipe can be made with either goat's milk or cow's milk, store bought or otherwise! You need to try this!

You can absolutely make this with store-bought cow's or goat's milk and the original recipe (in the description) uses sugar instead of honey. Adapt the recipe as needed and enjoy!!! Let me know what you think if you make it!! --Heather

Did you know you can add 1 Tablespoon of cocoa powder per 1/2 pint of cajeta? And can water-bath can. 1/2 inch headspace & process 20 min. I've done this with great success! Bless you Heather!

Good morning! As soon as I saw the thumbnail, I thought, “It must have worked!” Yay! I love caramel so we will have to add this to our future recipes list! Also, side note, kid #2 showed up yesterday morning (while I was away, of course). So now we have a buckling and a doeling!

Friends have taught me to use canned sweetened condensed milk,boiled to "soft ball" temperature with a candy thermometer,gotta' stir the dicken's out of it,to keep it from burning.Brown sugar,butter & milk will achieve much more flavorful result's.Guanajuato,Mexico is famous for their Cajeta.Homemade everything is usually the best,Thank's for showing us the True " Cajeta de Casera"!& That magma from the bubbles get's my respect everytime,lol!

My mother in law will boil the sweetened condensed milk in the can still!! It creates the caramel inside the can! Super cool!!

This is the first time I've heard of using honey instead of refined sugar. Thank you! Refined sugars make my feet hurt. This is going to be a wonderful way to get around that :)

This looked so Yummy I stopped the video and went out and made some.. YES, super tasty! My husband will love this.. depending on brand of coffee creamer it s so toxic other countries don't allow the sales. The honey definitely comes through

I don’t know if I’ve made this comment before, but I took the Cajeta and put big plops down on my freeze dryer sheet pan and freeze dried it. The only thing that didn’t seem the same was I had to use 2 of my freeze dried plops to taste up my coffee. I’d like to show you what this looks like but I can’t send you a photo here. I think I will by email.

Oh my goodness! This sounds amazing! I do want to try this! But one I don't have goats milk 😂 and 2... I am on very low carbs 😂. I was letting myself... My weight get away... So I had to take control and I look and feel much much better. It's been a journey.😂

I love dulce de leche waaaaay more than cajeta, where I’m from dulce de leche is our “peanut butter” for Americans. We use it in cakes, cookies, bread, and many more uses. I made some with a friends cows milk and I loved it! I discovered cajeta when I got to the us 20+ years ago, but I thought …. Goats milk ? How dare they? 😂 Mexicans only have cajeta not dulce de leche (at their stores in Utah) and I resented them 😂😂😂 This one for the coffee sounds delicious and I’m willing to try it, for my coffee, not for my birthday cake 😂 In all seriousness, thanks for sharing this simple recipe!!! I’ve been saving them in playlists for when my girls are in milk ❤

That would be the exact consistency I would go for too. I LOVE when it works to substitute honey for sugar, I've really grown a taste for honey over sugar, especially in sweet tea!

@Sage and Stone Homestead heck yeah! For me personally I have to add a bit more honey than I would sugar, and remember it's best to add your honey while the tea still warm, or like before you add the rest of your water otherwise the honey gets really difficult to stir in.

My wife and I just made some and it tastes wonderful unfortunately we had to use store-bought milk it took about 30 minutes. we don't have goats yet looking to get three in just a few months (1 buck 2 does) thank you so much and keep up your awesome work!

Good morning Heather. How are you all doing? That cajeta looks amazing. I was listening you talk about your Dutch oven. I've been looking for one and I came across a Ninja all purpose pot. Your cajeta looks perfect! I've made it a couple times (using sugar because I was afraid the extended heating would turn the honey bitter) but mine got too thick when it cooled. My recipe did not call for the baking soda either. So I'm excited to try this again!! I did can mine up into jelly jars & it kept very well for over a year. Someone else mentioned canning it!! Did you waterbath it? The honey didn't get bitter at all but for me everything came together in 20 min. 2 hours may have done it in!!

@@SageandStoneHomestead take my word for it....2 hours DID IT IN!! 😂 I tried to follow that recipe to the letter!! 🤣 Yes, I water bathed it, worked great. Even though it was far too thick & I had to warm it in the microwave to get it out of the jar, the flavor was wonderful & it was so nice to have it on the shelf & ready!

@@SageandStoneHomestead both times I made it, I tried to increase the recipe to make a large amount; I think that was what caused most of the trouble. Maybe doing smaller batches would be a wiser choice. FYI... learn from MY botch ups!! 😉

Yeah I'm not sure if the carmelisation is from the sugar or the milk or both. When made with cane sugar the mixture is definitely more taffy-like and more dense. With honey it's almost like a whip. It's addicting lol. Let me know if you do try it with stevia!

@@SageandStoneHomestead I was able to get a small round from a small mold. Maybe about 2 inches high and maybe about 6 inches across something like that. So now I have it in my cool pantry room thinking about turning on a small fan in there. I have it on a bamboo roller thing inside of a protest bag that’s nylon. I think it turned out pretty good considering I had a cast-iron pot with about eight cans of coconut milk on top of it. There were no visible holes on the outside of the, I just had markings from the muslin. I didn’t have any annatto coloring so I had some paste that did not work. It’s sort of spotty over the cheese. Hope that doesn’t make it weird so I’m gonna turn it like you said and then I’m gonna put it in the small cooler I think I can control pretty much the temperature. I’m just gonna keep on making cheese so I can have it at hand. I tried to join your channel, but I can’t find out how to change my payment situation. I don’t really know where to go? So if you have any suggestions, I’m gonna join your channel. If you can point me in the direction to update my credit card. Actually debit card I don’t do credit cards anymore. Yes, just like boiling the raw milk changes things and kills off the good bacteria, I'm sure heating the honey harms some of the good enzymes and stuff but it should not make it harmful for you to eat. Raw versions of both are definitely ideal. ♡♡♡

Currently making this, I'm about 15 minutes in, and it's kinda curding. Is that normal? It smells amazing so there's that😅 I doubled the recipe, but added half a cup more milk because I didn't want to put that little bit back into the fridge... is that my problem? 😬

I haven't had it curdle but it could if the milk is older/more acid. It could still work though, let me know!!

​@SageandStoneHomestead it thickened some, the curds didn't go away. I strained some of it to see, the liquid is still pretty thin, and has a string honey flavor, I'm thinking next time do a little less honey. The milk was 1-2 weeks old😬

We get lots of raw honey in our diet as beekeepers. To use honey in this way is not bad for you. Does it kill some enzymes, sure. Is that a fine sacrifice to not use refined sugar? Absolutely.
