Musakka is an eggplant based (sometimes potato) dish, often containing ground lamb or beef and is common in the Middle East, Balkans and of course Turkey with many local and regional variations.
While many versions, especially the Greek one Moussaka, have a top layer made of béchamel sauce, Turkish musakka consists of sliced and fried eggplant served in a tomato-based meat sauce, warm or at room temperature. This dish is a classic in traditional Turkish cuisine and pair with it rice and yogurt (or better cacık), that's an addictive combination.

Ingredients:
• 500 g ground lamb (or beef), lean or medium
• 1 kg eggplants
• 4 tomatoes (medium size) 3 of them peeled
• 2 onions
• 10 mild green chilies
• 4 cloves of garlic
• 2 tbsp tomato paste
• 3 tsp salt
• 3 tsp chili flakes (pul biber)
• 1 tsp black pepper
• 1 liter oil for frying
• 1 cup chopped parsley
Instructions:
1. Cut the eggplants in rings, about 1 cm thick for each piece
2. Soak them in salted water for 10 minutes, drain and pat dry with a paper towel
3. Heat up 1 liter of oil in large pan and fry the eggplants until golden brown
4. Transfer to a plate with a paper towel to get rid of the excess oil
5. Heat up a large pan and start cooking the ground meat while crushing and mixing to avoid clumps
6. In the meantime, finely chop the onions and crush and peel the garlics and finely chop
7. Once the meat is slightly browned and cooked, add the chopped onions and cook until softened
8. Deseed and chop 5-6 green chilies and add them into the pan, stir until the chilies are cooked
9. Add 2 tsp salt, 3 tsp chili flakes and 1 tsp black pepper and cook until combined and fragrant
10. Peel and dice 2 tomatoes into cubes and add into the pan
11. Bring to low heat, cook and stir until the tomatoes are softened and nicely cooked
12. While it’s cooking slowly, add 2 tbsp tomato / chili paste into a sauce pan and stir and cook for 1 -2 minutes
13. Add 400 ml water and 1 tsp salt, mix until incorporated
14. Let it simmer and cook until the sauce is slightly thickened
15. Layer the eggplants to the bottom of a large enough baking dish or glass casserole
16. Layer the ground meat mix evenly on top to cover the eggplants.
17. Pour the sauce over evenly
18. Cut 1 tomato into ½ cm thick slices and cut 4 green chilies into half
19. Garnish the tray with the tomato and chili slices
20. Cook in a pre-heated oven at 200°C / 390°F about 30 - 40 minutes until the tomatoes and chilies are cooked and nicely roasted
21. Serve in slices and enjoy with yogurt or Turkish rice pilaf

Great to see this the Turkish way. I’ve always had it layered with cheese; feta or something similar, but always suspected this was an anglicised version that was trying to make it more like a lasagne. I can imagine this tastes delicious. Great videos, I’m learning a lot and can’t express how much I appreciate the format you present your videos - no commentary, just cooking. Cheers x

Περίεργο, σαν ημιτελές χωρίς την μπεσαμέλ, άλλωστε η οξύτητα από την ντομάτα κ το λάδι χρειάζεται την μπεσαμέλ κ το τυρί για να υπάρχει ισορροπία. Πιστεύω αντικειμενικά ότι η ελληνική εκδοχή είναι οπτικά κ γευστικά πολύ καλύτερη. 🧡

@@HungryManKitchen It had ground lamb in it. And that beautiful olive oil that was drizzled on top. Ohhh. I miss that market. There was something else I used to buy there. It was a feta and pepper paste dip. Oh, gosh. I've been trying to find a recipe for it, but I only know the German name. Schwiegermutter kase. It was spicy and delicious.

Usually beef or alternatively lamb can be used. Kokorec is hard to make at home at least in Europe as some ingredients are difficult to find, but I'll make it one day 😉

I really like Turkish cusine. Turkish food is more heavily, more fat but more tasty. This version of musaka it looks more easily and I will prefer because I don't have enough time ...but I will add besamel=( cream ) on the top and will be delicious.

Thank you! They usually sell both, that said the hot one is not too hot, adds just a little bit heat to the dishes. You can also use harissa in case you can't find Turkish pepper paste. I will soon post a recipe for a homemade Turkish pepper paste.

My technique is to sear the hamburger on two sides to get browning. Once browned, i reduce to medium heat and add onion to the half cooked ground meats. In this way, the onions have time to soften and become translucent while also flavouring the ground meats

It's not a habit, we eat with the fork, but sometimes I enjoy dipping the bread into the sauce to soak up the flavors.

Finally, a recipe where moussaka isn't ruined by distracting ingredients, you know, ingredients trying to convince you it's good. French add butter when they mess things up, Greek add feta cheese when they mess things up. Italians start singing. Americans leave the premises. Turks, I believe, follow a simpler path. .

Most of the Turkish recipes are rather simple and aiming to showcase the flavor of the main ingredients. Another good example is traditional Turkish doner where good quality meat is the star vs Berliner doner and other variants with different sauces stealing the scene. All of them good if made properly, but I tend to prefer the Turkish version as I'm used to those flavors from my childhood.

There is no medium or medium rare in traditional Turkish dishes, but as for your question, it's cooked in the sauce, so it's not dry or overcooked. It's similar to Italian ragu, if it makes sense.

It's probably not baked long enough to lose its proteins, especially in the sauce, you're right buuut I read that it COULD be an issue so I'm glad my comment wasn't nonsense. I was wondering also because in some cultures the vegetables often look overdone but like it's how it should be... Anyways, your dish looks great. 🙃

@@HungryManKitchen I guess it would be rather rice pilav, right? Or would the bulgur pilav also be common? I've read that these kind of eggplant dishes are more common in and around Istanbul, where rice pilav is also more often eaten?

You can make the same recipe with potatoes instead of eggplant. We make this dish both ways.

Original moussaka had no resemblance to the layered version we know today. It was the Levantine Arabs which introduced moussaka to Turks and Greeks living in Anatolia. (The word itself is borrowed from the Arabic language during Ottoman reign) In the 1920s, Nikolaus Tselementes, a Greek chef and developed the Greek version of moussaka and westernized the recipe. He invented the layers and recommended the use of bechamel sauce which is quite a nice touch.

No, it is a turkish food. Because basic form is turkish style. Bechamel sauce is french. Greek mousakka= turkish mousakka+ french bechamel sauce
