Made this recipe and loved it -I made this twice and the second time around, I added in about 2 tablespoons of white whine and deglazed the mushrooms and shallots before adding the stock! (Deglaze=cooking out the alcohol/reducing to half) Complete game changer and brought everything together, along with an added brightness to the dish
hi there, not to be a know better but just to clarify something. Deglazing a pan involves adding liquid, such as stock or wine, to a pan to loosen and dissolve food particles that are stuck to the bottom after cooking or searing. The cooked food particles, known as fond, are the source of immense flavor.

When I made these raviolis for the first time, I had never cooked mushrooms. I learned so much about how to cook them through this video and your advises! Plus these raviolis are so good! I bought frozen cheese ravioli and did the mushroom filling on top of the cooked ravioli. It was fantastic. It was a happy valentines day. Making my own pasta too much for me. The flavour of the topping is amazing. I will try the mushroom sauce another day. Thanks my man.

Wow! Thank you for this video! I saw at least 4 ways to make ravioli & it started to feel intimidating! So I bought the combo pasta attachment for my mixer & I followed your recipe but also added a few tablespoons of finely chopped sun dried tomatoes to the sauce and my ravioli came out so delicious!! Last night's dinner although I added some of the filling to the sauce. Went on a ravioli spree and made over 100 (mushroom and butternut squash) Tarragon instead of parsley. Great recipe.

As shown and said in the video. You don't have to cook mushrooms on a high heat to remove the water content. Yes, you can cook them on a high temperature to remove the water. For this type of dish cook them low and slow and eventually the water will evaporate also without burning other ingredients. Trust me I've been doing this for 17 years :)
This was absolutely amazing.. crazy thst my girlfriend reccomended me making it for valentines day when you said that in the first 5 minutes of the video. If you dont have a pasta press and roll it all down by hand boil your pasta for longer than you think. The video said 3 minutes but since mine was so thick it took 9~
Oh and tip for all those who want one those pasta machines, well Steve's is a good one, however for home use there is a company in Canada called London Drugs, sells a machine almost identical for $29.95 and I have been using it for months and it works great!

Nice. I'm making the sauce tonight. A few thoughts on the ravioli: 1. Try a few chopped roasted walnuts with the mushroom mix instead of cream. Briefly pulse in a cuisinart you get a near nut butter that works really well with mushrooms 2. Instead of cutting single circles, fold the pasta in two layers. Gently mark circles on the lower layer, place filling in these marked circle, fold over again, and cut both layers together at once. Measure twice, cut once.
you did not say what stock you used and the link did not give up the recipe...i figured maybe chicken but who knows. I made this and wow! good darn food. thank you
