I just wanted to say, this came out an hour before I needed to make dinner, and we where in a bit of a pinch. We had some left over cooked rice, a tiny piece of Christmas ham, a few stray carrots, onion, garlic, 1 egg and one package of ramen chicken seasoning and a tiny bit of frozen peas. Your recipe came at the PERFECT time and I cooked everything up following how you showed here, and let me say, it was the best dang fried rice I have EVER had. It was better then what we get at our local restaurant. In fact it was so well received in the house hold that I am making it again tonight, right now

I use the rest of the eggshell to retrieve broken shells. For some reason the broken piece goes right over to the other piece of shell and you just scoop it out.

winter months always make my depression hit harder. I love cooking but summoning the energy for it sometimes is an impossible task, and fried rice has always been a favourite of mine. you couldn't have uploaded this at a better time!

When my girls were young, at least once a week I used Ramen noodles or rice and added leftover bits of meats and vegetables from dinners! I had one container in the fridge for all miscellaneous vegetables that weren't enough for another meal, so it would have maybe 1/2 cup of broccoli, handful peas etc. Then another container for protein which might have 1/2 pork chop, a hot dog, bit steak etc. This was always the kids favorite lunch! Happy New Year All! May 2021 be more peaceful and healthy!
Also, I think you should make more of these "toss" dishes where you have a main ingredient and then just improvise with pantry stuff - I suspect people need this right now tbh.
When you make the version with soy sauce, do you add any other seasonings? My Japanese grandfather taught me to make fried rice when I was a kid. He'd use leftover rice, shoyu, a bit of fish sauce, eggs, ham, peas & carrots, a small drizzle of sesame oil and top it off (in the bowl) with a few good shakes of furikake.

Ginger is optional but it needs some chilis. They are not optional in Southeast Asia. Garlic is mandatory. We would add a dash of fish sauce too. Phom chob Khao Pad Moo.

You mentioned that too much smells like skunk.. I have 3 cats, and a year or so ago I opened the back door to check in on one of the feral's and there was this cat at my back door and I'm thinking you are a weird looking cat, and then I realize, you aren't a cat, you're a skunk. It was an actual skunk just hangin' out with the other cats.
I can't help but reminisce about watching the candy tasting videos Emmy filmed in Japan more than a decade or so ago. I think about where I was in life back then, what were my worries, problems or happy moments. Then I come back to the present moment and think about how much has changed, how much I've grown, how Emmy's life has changed too. It's nice :)
To me ,the versatility of this meal is what makes it so appealing. When I was younger my mom always made me fried rice. She would put in whatever she had leftover in the fridge and this would change each time she made it. Comfort food at its best. Thanks for sharing Emmy
My best friend is from Hawaii, and when I went to visit her and her family a few years ago her mom taught me to make spam fried rice - it’s a staple there. Ever since it’s my go-to weekday dinner, and I’ve even converted a bunch of my New England friends who used to be deeply suspicious of Spam 😄 It’s SO good
In Hawaii, when they make Spam fried rice, they marinate the spam in sugar and shoyu solution and then caramelized the spam in the pan to add to the rice. So good!
Here in Spain we have a rice recipe very similar to this one. It is called "arroz tres delicias" and everyone makes it when they don't feel like cooking a lot 😅. You can even find it in the frozen food section at the supermarket!

i LOVE this! this is exactly my recipe for fried rice, i always wonder why people make fried rice where the egg sticks to everything. if you don't have chicken powder/don't use chicken powder, i use mushroom powder instead! anything which adds that msg flavour is perfect :P

My fried rice comes out sticking together in clumps. I love sticky rice, but not as fried rice. I just turned 60, love fried rice and can't make it. BUT today I am learning that rice must be DRY to fry. Okay. I'm freezing cooked rice to see how that comes out. Sigh
No such thing as "easy fried rice", maybe if you use dry rice. I use sticky rice and even just plain rice, just letting it sit over night in the refridgerator isn't enough. I hate making fried rice, we're over! It's a stick together greasy mess everytime! Everytime without exception.😢

You can really do a lot with fried rice. I make a curry cheese fried rice that's a hit with the family. Rice, minced lamb, curry powder, garlic, onions, salt pepper, beef bullion powder, a bit of sweet soy sauce keca manis, green peas and cubed cheddar cheese(the cheap Kraft kind). Really really delicious when you're bored with the regular fried rice.
It's strong enough to make you gasp and your eyes water if you're close enough. It smells like marijuana amplified x50. But, from enough distance, I admit that I like it. It smells like being a kid and camping with your family. Long ago.....
