I had really good luck using just wood. I have noticed if the wood isn’t 100% dry then it can start smoking and also not burning as hot. The wood just starts turning black but not really burning. I found the mini hickory chunks from Walmart are really good and always super dry.
Depends on type of pizza and flour used ….NY Style Bread Flour between 600 give or take ….Napoleton with 00 flour then 800 give or take …..900 too hot for anything
Ahh crap my bad dude. I forgot to mention I use the axe to split them up until thinner logs. Some of the pieces fit out of the box but most you need to chop down. That’s why I sometimes prefer the smaller boxes of hickory wood. It comes in like small box shaped logs instead of these longer ones.

The bigger box of hickory wood in the video is a better value compared to the $9 box of the smaller chunks of hickory blocks but you don’t need to do the extra splitting. You can just put the wood in. So if you prefer not to use the axe. The blue box of hickory mini wood blocks at Walmart also work really good.
