LOVE, LOVE, LOVE the vacuum chamber idea. I use mine for so many other things, don't know why I didn't think to use it for gels ... D'oh

Very nice. Fid you vacuum with a plate and a plastic sheet? No vacuum bag? What percentage? How did it not blow all over the place?

What can you use if you don’t have vacuum? Can you just leave it to stand in the fridge and it will clear up over time, or is it too viscous?

Smear it out thin and use a blowtorch to gently pop the bubbles.

Try ultratex, you don't need to heat the liquid you want to thicken keeping the freshness of the raspberry.

Ik vacumeer altijd te veel vloeistof in 1 keer om de gel helder te krijgen haha. Met de vinger op de vacumeer stop knop, just in case.

Why didn't you blend the mixture before straining? You would end up with way more liquid that way. Or is there a specific reason?

the goal here is to obtain the clearest liquid possible. blending would create particles that could pass through the sieve and negate the crystal clear product.

You can put plastic wrap on top of a sheet tray and vaccum seal it that way? If you put it in a vac bag will you get the same result?

Most of the time, the liquid will come out of the bag before the vacuum process is completed.

@@pieter-matthijsbolt6375 ive been able to vacuum seal liquids before. I have a polysci 300 and it has some elevation at the sealto prevent the liquid from getting out. Really what i am asking is will it get rid of the cloudiness of the gel.

@johnmarkvanzee if the liquid is clear before blendering, a good 30 seconds of a strong vacuum will remove the cloudiness that is created by "whisking" air in during blendering. Why not try both methods out. Your machine looks capable enough to do it both ways :p
