This was a lovely meal. I added some saffron and sweet peas to the dish. We had it with a glass of Pinot Gris. A lovely light and healthy dinner. Thanks you for sharing your Mothers recipe.
I've got frozen cod and salmon that's been in my freezer for some time, both fish are so thin, I haven't used them. But with this recipe, I think I could use both in this recipe. Now only problem is that I'm just about out of Bomba rice. I guess I should just order some more on Amazon. Was hoping I'd be back in Spain before I needed any more Bomba rice. Hope my home sells quickly, so I can move back to Spain. Probably need more Golden Saffron and Spanish (Kiva) hot and sweet smoked paprika.
I did cook this today. Very easy, very delicious. We had oven roasted asparagus and a nice baguette with olive oil and balsamic vinegar dipping sauce for the bread. I think the rice without the fish would be just spectacular with other dishes or even some pan fried cod or your Frittatas. Great recipe.
Made this tonight for dinner and YUMMY! I ended up adding some extra large shrimp as well since my cod was under a pound. Definitely going into the dinner rotation, thank you so much!
