This is deliberate. Police sketches are often created in a way to exaggerate certain features so as to trigger memories. a sketch thats too close to real looks too generic.

Even though the pointy chin is not accurate, it helps to accentuate the broadness of the cheeks & forehead. Remember, the police artist is not drawing from a personal memory but basing their sketch on the witness's attempt to describe a person they'd never seen before.

Because that's what police sketch artists do. They are trained to pronounce certain features of people they are being described because pronounced/exaggerated sketches are easier for people to remember and catch on to. Search up police sketches and you will see what I mean.
