The actress who played Constanze said she hated the "nipples of Venus" as they were just marzipan (no chestnuts in brandied sugar) with a raisin on top and she had to eat so many because there were several takes. I saw that in a documentary about the movie ages ago.

@@zandonadi As much as I love Max, I have to say this recipe isn't what I was expecting after seeing the scene from Amadeus. I thought it would be like a whole roasted chestnut in a tiny mold packed with powder sugar and brandy or brandied marzipan with a raisin on top. Anyhows, not the end of the world 🍬

Man, Max's instructional style comes through so much and it's very refreshing for the format, but then it's combined with the typical lack of inhibition that you only really get with these types of episode. This is an all time classic.

Love your collab! They didn't have white chocolate in Salieri's day, but they did have fondant, which would have looked much the same, plus, it's moldable. I have always believed that the centers were whole chestnuts candied until tender in sugared brandy, but the chestnut paste is a perfectly valid interpretation.

@@brucetidwell7715 I know what they're called, but it's all just simmering. Editing could have made that step mere seconds instead of building a truffle from chestnut paste. I'm not saying that it's the wrong choice. It makes an accessible confection with the visual ties to what might have been served. But I do think that fondant enrobed (especially if made with the traditional gum syrup base) marrons glace might have been more authentic to the 18th century. Edits: spellcheck hates me.

They wouldn't have matched the ones in the film as they would have been small as you can't really have more than one nut in the confection without it losing that... spherical shape. The historical ones were almost surely Marons Glacé, drunken, coated, and decorated. But they wouldn't have shown up very well on screen.

Having seen Chef John make them on Food Wishes, I thought the ones both in the movie and back in the day would've been the same as the Food Wishes version. (What was used for the movie was actually marzipan with a raisin on top instead of chocolate.)

@@Xerxes2005 the nuns farts are pie dough rolled with brown sugar and then baked so you basically have pinwheels of pie crust and brown sugar. (Quebec version) Nuns puffs are the airy ball things.

The film version was brandied chestnuts with cooked sugar fondant coating. The recipes found in cookbooks use white chocolate and a tiny dollop of dark chocolate. I tested both versions, however, I prefer the poured sugar fondant.

Interesting take on this dessert. Coming from the central Europe where the movie was filmed, I imagined the Nipples of Venus to be more akin to the traditional Austrian/Slavic sweet desserts that we mainly enjoy during Christmas season. There are "chestnut" cookies with alcohol flavour (which are not actually made from chestnuts) that can be dipped in chocolate. From watching the scene it also looks more like the top layer is just white marcipan that covers the "chestnut".

Since Salieri was Italian, I always thought the Nipples were more like a marzipan made from the chestnuts then glazed with something like royal icing made from powdered sugar and brandy

In the movie he said " Roman chestnut in brandy sugar" chocolate was not mentioned, therefore the outside would have been marzipan. And you can see as they are eating them they are white inside as well. Love that movie.

Great homage to a very important moment in Amadeus. Salieri has a gluttonous streak through the film, and this scene ends in a lustful proposal. Highly recommended film!

I am so deeply stoked at this reference to one of my favorite movies and one of the moments of it I was most curious about. I had wondered for years how to make Nipples of Venus and what they would taste like. This was an epic adventure come true!! Thank you so much!!

Absolutely love this episode! Forty-five years ago, I made assorted, anatomically correct body parts , packaged them in decorative tins, and gave them out as Christmas presents to select friends and family. I made them with homemade marzipan, assorted food colorings, and a garlic press to simulate hair. They were a huge hit!

I have always wondered what on earth that dessert was!!! My mother was of the opinion that it was some type of pastry cream, I thought it might be something similar to mascarpone, but neither of those appear to be right!
