NO CREAM Salmon Carbonara
200g salmon
1 tablespoon garlic chopped
Oil to pan fry the salmon
Sauce
1 whole egg
1 egg yolk
Salt
Cracked black pepper
1 teaspoon dried herbs
1 teaspoon rosemary, chopped
30g Parmesan or mature cheddar, grated
Salt
All all the sauce ingredients into a bowl & whisk until smooth.
150g spaghetti
Heat oil in a pan, sauté garlic and add the cubes of salmon. Cook until the salmon cubes cook and get golden brown on the sides. Season the salmon with dried herbs, salt & pepper.
Season water with salt , bring to a boil and add the spaghetti . Cook the pasta and drain.
Add the pasta to the salmon and gently stir and cook the pasta with the salmon.
Add the egg & cheese mixture, stir continuously over low heat to cook the eggs and form the sauce , if you overcook the eggs it will turn into scrambled eggs & ruin the dish.
Fold in chopped rosemary and serve warm.
