Konnichiwa Friends! After several times of trial and error making this gluten free coffee bun including the topping. I succesfully baked this one.
But first let me apologize the quality and clips of this video. because some of the clips was my previous making of these buns that was succesfully done.
But what is important is the recipe and making that i will share to you.
Pre heat your oven at 200*C and bake it for 190*C for 15 minutes
If you are using gas oven Pre heat at 190*C and bake for 180*C
1. Mix all the dry ingredients and mix for 3 minutes,, while in the middle of mixing add vegetable oil
2. After 3 minutes of mixing , add psyllium powder and mix for 3 minutes again.
3. Make 3 dough and let it rest
4.Prepare oil , spread this to your hand ,remove gas of the dough make circle shape then ferment for 15 minutes , after that, add coffee topping on it then Bake.
**** OR if you want some filling for these......., after you add filling of each dough, ferment for 15 minutes, procede the topping, Then bake
Custard coffee Filling
1 eggyolk, 1 gram coffee granule, 26 gram brown sugar,8 gram flour, 5 gram cocoa powder, 1/8 teaspoon of psyllium powder (optional) 5 gram unsalted butter.
Coffee bun topping
2 gram coffee granules, 1 Teaspoon hot water,( very hot) , 20 gram brown sugar, 15 gram beaten egg of the chicken, 20 gram rice flour, 5 gram potato starch and 15 gram of Unsalted butter
gluten free bun (3 buns)
125 gram rice flour, 105~110 water (27*c) 4 gram dry yeast, 7 gram sugar, 1 gram salt, 8 gram vegetable oil or rice oil, 4 gram psyllium powder.
** you cannot omit psyllium powder because the texture of bread is not that kind of tasty, But i as researched in google and pinterst, there are some rice flour bread that not include psyllium powder. But personally i will like to add psyllium powder.
