How to Make Ube Cheesecake Basque Style (Burnt Cheesecake)
Round Pan: 16.5 cm (6.5 inches)
Preheat Oven at 205°C (400°F)
Bake Time: 60-65 mins or until top is browned or "burnt" and center is wobbly
INGREDIENTS:

313 g (1 1/4 cup) CREAM CHEESE, softened / room temperature
120 g (1 cup + 1/2 tbsp) SUGAR
225 g (3/4 cup) UBE JAM (Homemade Ube Halaya Recipe: • UBE HALAYA | How To Ma... )
2 ml (1/2 tsp) UBE EXTRACT (get it here: shp.ee/cxd3t59)
3 large EGGS
240 g (1 cup) ALL PURPOSE CREAM / HEAVY CREAM / HEAVY WHIPPING CREAM
8 g (1 tbsp) CORNSTARCH (get it here: shp.ee/rkifi26)

Hello! Just tried this last night.i only have 6" pan so that's what i used. So it turned out pretty high than yours but then it deflated so it was okay. My problem was, after cooling it at room temp, i left it in the fridge overnight (covered) and now when i opened it the sides and bottom was wet! Is it supposed to be like that? I haven't tasted it yet as im trying to dry it up a little bit. It smells so good though that I hope it will be okay. Shpuld i just have left it uncovered in the fridge?😓

Yes, it should be uncovered for that very reason. Covering it will create moisture but I think that's just going to be an outside issue. Unlike sponge or chiffon cake where it'll absorb water from the moisture, the inside of the cheesecake should still be good and hopefully that is the case 😊

Is it possible to do this without the ube extract? It’s hard to find that these days. Does it add flavor or just color?

Hi! The ube extract does add flavor and it's there to enhance it. It is recommended but yes, it's still possible to make even without it 😊

Hi Rachel. I'm so sorry to hear that 😞 I'll try my best to help since I'm not entirely sure what happened. Basque cheesecake does tend to deflate unevenly although I'm not sure how uneven yours became. The oven should be preheated to 205°C or 400°F before baking. As for the insides of the cheesecake, it should be refrigerated 6 hours to overnight before serving. I left mine overnight and the setting of my fridge around that time was actually pretty high since it was summer. I think that's why mine looked compact as you mentioned tho the insides were actually very soft and silky. I hope I was able to help and I do feel really bad you didn't have a good experience 😥

It was really lopsided when it deflated and there was a big crack on the side. 😢 It was really delicious though. Anyway, I'll follow your tips when I try it again. Thanks!
