Ingredients: makes 12 small balls
For the matcha bean paste
200g white flower beans (Shirohana mame)
150g beet sugar
10g matcha
For the dumpling:
20g wheat starch powder (any starch powder can be substitution)
20g hot water
120g glutinous rice flour
100g water
30g beet sugar (I didn’t add sugar in the video but I normally do.)
raw sesame seeds for coating
Instructions:
1. soak white flower beans for at least 8 hours. Then peel.
2. bring to a boil and discard the water. Add water and simmer for 30 to 40 minutes.
3 strain the beans and add water. Leave it for a few minutes then discard the liquid that rises to the top. Repeat this a couple of times.
4. squeeze the mixture.
5. Transfer the mixture to the pan and add beet sugar. heat it up until desired soft texture.
6. combine wheat starch powder and hot water and mix well.
7. add glutinous rice flour, water and beet sugar and mix well.
8. divide the dough into 12 equal pieces, wrap the matcha bean paste then coat with raw sesame seeds.
9. deep fry at 130C/270F for 4 to 5 minutes.
10. Enjoy!

「材料」
抹茶餡
白花豆 200g
てんさい糖 150g
抹茶 10g
胡麻団子
浮き粉 20g(片栗粉などの他の澱粉で代用可)
熱湯 20g
白玉粉 120g
水 100g
てんさい糖 30g(動画では加えていませんが、団子にも甘みを加えるとしっかり甘くなります)
洗いごま 適量
「作り方」
1、白花豆を8時間以上浸水し、皮を剥きます。
2、茹でこぼしをして、新しい水で30〜40分ほど煮ます。
3、裏漉しします。乾燥してやりづらい場合は水を加えつつ裏漉しします。水を加え、上澄み液を捨てます。これを数回繰り返します。
4、3を絞ります。さらしなどを使って手で絞っても構いません。
5、できた生餡にてんさい糖を加えて火にかけます。程よい固さになったら火から下ろします。
6、浮き粉と熱湯を混ぜ、よく練ります。
7、白玉粉と水とてんさい糖を加えてよく混ぜ合わせます。
8、生地を12等分して抹茶餡を包みこみ、表面に洗い胡麻をまぶします。
9、130度の油で4~5分ほど揚げます。(高温になると破裂しやすくなるので、温度は常にチェックしてね!)
10、エンジョーイ!

I looked up what white flour beans were it’s says it’s dry navy beans. But for me these look a bit like lima beans.

This looks delicious! In the Philippines we have something similar called "buchi" and they're one of my fave desserts. The bean filling we use are usually from mung beans or red beans, but i've seen them filled with ube jam too

This is what we call "onde-onde" in Indonesia. The typical onde-onde usually has mung bean filling (like ppl from other countries had mentioned as well). But some places in Indonesia have another variant (that Javanese people call "klepon") that is green in colour, covered with dessicated coconut, but with palm sugar filling.

It took me by surprise that there are so many countries has this similar dessert. We have something similar too here in Indonesia. It’s called “onde-onde” usually filled with mung bean. Have you ever tried it, Ryo san?

i dont think thats too much water, especially since cooking rice uses up a similar amount

@@nicolle2126 for rice we only throw away the washed water... Here after washing, there is boiling with water twice and discarding the water both times and then mixing the paste with water and allowing it to settle and discarding the top water which is done 2-3 times... Too much wastage.. is there any specific reason??

@@Zlnfgz for much of the processes he does, i think it's mostly to get rid of the fiber in the beans. When you first cook it, the liquid contains a lot of fiber and it can make people gassy. In some beans it can be considered pretty toxic if you also eat the liquid. The second part with the sieve and making it rise to the top, it's to make the paste very very smooth. It's for texture. I think the amount of water he used in total is just like when you wash rice 4 times.
