Mandis is a traditional dish that originated from Yemen, consisting mainly of meat and rice with a special blend of spices cooked in a pit underground. It is extremely popular in the Middle East, and even considered as a staple dish in many regions.
LAMB SHANKS
INGREDIENTS
3 kg Lamb Shanks
½ cup | oil
1 tbs | black peppercorns
1 tbs | cinnamon (whole)
1 tbs | bay leaf
¼ cup | garlic
¼ cup | ginger
2 tsp | salt
1 cup | water
METHOD
- Sear the lamb shanks in oil over high heat
- Add all the above ingredients and water and cook on medium to low heat for 3 to 5 hours, or until the meat is completely tender
- Place a burnt coal over aluminum foil, drizzle with oil and let it smoke for 30 minutes
MANDI RICE
INGREDIENTS
4 cup | rice
½ cup | oil
2 small onions
1 large cinnamon stick
1 bay leaf
4 dried lemons
1 tbs | butter
1 tbs | green chili
½ cup | crushed garlic
3 tsp | salt
5 cardamoms
1 tsp | black peppercorns
1 tbs | mandi masala (link below)
1 tbs | chicken powder
1 tbs | lemon juice
6 cups | water
METHOD
- Wash and soak the rice
- Fry the chopped onions in oil until golden
- Add all the above whole spices, the crushed garlic and green chili
- I use 1 part rice to 1.5 parts water for cooking the rice, so I added 6 cups water for the 4 cups of rice
- Add the salt and the rest of the spices
- Add the rice and cook on high heat until all the liquid is gone and then put on low flame until the rice is done
- Put the lemon juice on the prepared rice and smoke with the burnt coal
SIDE VEGETABLES
INGREDIENTS
3 tbs | oil
5 potatoes
1 tsp | salt
3 tomatoes
3 peppers
METHOD
- Heat oil in a pan
- Add peeled potatoes, salt, tomatoes, and peppers
- Cook over low flame until the potatoes are done. Mine tools almost 40 minutes
- No need to add any water, the moisture from the tomatoes and peppers will cook the potatoes

½ tsp | salt
