There's this continuum of recreating vs. re-imagining, if you will. Some people are happy with different ends of that spectrum, while others prefer something in the middle. Most of my covers are much closer to the recreating side, but for many songs, the acoustic arrangement requires a fair amount of re-imagining (or at least prioritizing). There are people out there doing more inventive arrangements, but those can be hit and miss, depending on how far it strays from what people loved. My $.02.
