That's very sad, I meet people on these job sites here and just know I'm not from here and once they found out you are from another state. They start asking you too many questions? Lots of people not familiar with other New Orleans hot sausage outside of Patton’s don’t know that traditional hot sausage is made with pork. Patton’s is made with beef, he changed it up. Hot sausage has been made with pork in New Orleans for centuries. The pork version is even better!

They have both for purchase. Schools usually serve the patties for lunch, but restaurants typically use links for hot sausage poboys. I like the links better.
If y’all like New Orleans history. Listen to this… The old New Orleans French name of “hot sausage” is chaurice (show-reese). The origin of this sausage is chorizo. When Spaniards came to New Orleans to settle when Louisiana was a Spanish colony (1763-1803), they brought a fresh version of Spanish chorizo. At that time, New Orleans was predominantly French speaking due to being previously a French colony and the name chorizo was made to sound French as chaurice. In the 20th century, the English name “hot sausage” gained popularity in and around New Orleans due to English domination of the 20th century in New Orleans and the old French name chaurice faded to a minority of folks that still carry this knowledge.

Imma have to look for these sausage patties they look delish. I use hot sausage and take it out of the casing and either patty it up or just ground it up and use it for Sammie's. My grandparents used to make sandwiches with hot sausage all the time it's something I grew up in and I still love them. People always make hamburgers but never think to do the same with sausage idk why it's so good. I also love sausage with peppers onions n mushrooms cooked down with some balsamic vinegar...on a sammich with Swiss cheese it's so good.
I dont understand the "chopped cheese"? Are they taking ground beef and making a burger pattie, then chopping the burger patty up into ground beef? Why? Why not just cook ground beef? I assume its a reason, or something im missing. Can someone help me out?
