I have 3 of Carolyns cookbooks and love everything I've tried. Everyone loves the cheesecake recipe. I started low carb 4+ years ago because of chronic pain. I just started by not eating bread, pasta, potatoes, starchy things and junk. I lost 32 pounds in about 6 months with just that and at the 1 month mark I realized that my pain had almost gone away. That is my motivation, I don't want the pain.

Thank you for this interview! I have been keto for almost 6 yrs and Carolyn was the first keto blogger that I made a Cheesecake that was keto. I know when I make one of her recipes, it won't be a waste of my money and time! I have all her books, she is the best!

Hey Steve and Carolyn, love your chat! Always interesting to hear your perspectives. My brother has diabetes and asked me about keto. I just told him to eat protein and lots of veggies. I wanted to keep it simple, so it is doable. Carolyn, I have a sweet tooth too and love to bake. My favourite recipe of yours is the Nanaimo bars. It is sooooo delish. Must admit, birthdays and special occasions I will make (non keto) apple pie, butter tarts, and lovely cakes. …5-6 non-keto desserts in 356 days is a drop in the bucket. LOL. Love from 🇨🇦

Carolyn's book, Keto Baking was actually one of the first books I bought when I started the keto lifestyle in 2019. I didn't have many resources at that time and finding someone who was cooking keto was wonderful. So thank you Carolyn for giving me the impetuous to stay on keto when I was at the beginning. I still find her recipes fun and good to eat.

Been looking forward to this episode. Alldayidreamabout food is-my “go to” place when I want to make anything. Her recipes have always been the best. Never had a bad one yet. One recipe that I’ve made over and over is her keto honey mustard dressing-to die for! She always responds to comments on specific recipes, whether I’ve had a success or a bit of a problem. She’s just plain GREAT.

I have 5 of Carolyn’s cookbooks, best keto baking hands down. I have made her recipes and taken the yummy baked goods to parties, they can’t believe it is keto. One husband bought her book just because of the banana bread. Lol and the wife said he will have to bake it because she was too busy, and the husband wasn’t keto. Love it. Hey, Steve! Great interview! Carolyn is one of my favorite go-to content creators for keto baking. You mentioned the puff pastry crust. Have you tried Alycia's - Keto Upgrade - recipe. I did to make some crawfish hand pies as a test of the recipe to eventually make a Beef Wellington. It worked well. Just don't combine and re-roll the scraps. It won't flake up as well. Of course, it's time-consuming, but I felt it was well worth the time and effort. I'm going to do a double-batch for the complete cover for the sous vide and seared beef for the Wellington, and a single batch for the lattice-cut and stretched outer layer.
Side note to Carolyn: I went back and watched this again. I laughed out loud when you talked about your teens' rebellious eating. I remember when my kids came home after being away at college. In a few weeks I went from being the worst cook in America to making decent food. By Christmas break I was the best chef on the planet!! 🤣🤣 Hang in there Mom!

My favorite podcast to date! And Carolyn's Kentucky Butter Cake recipe is the BOMB!!!!!!! Her tutorial/videos of her recipes are amazing. All of the recipes I've tried are fairly easy and all are yummy.

Been waiting for this interview since it was announced. Carolyn’s website, blog, and RU-vid channel were the first sources I found when looking for Keto recipes and she’s still one of my go to sources for new recipes because, as you both said doing things Keto isn’t always as simple as substituting wheat flour for almond flour or replacing sugar with allulose. Hers are hands down the best keto recipes I’ve come across and I use many of them repeatedly. I will definitely need to get her cookbook because not only am I a fan of her recipes, I also collect cookbooks. I agree with what you said, Steve, reading through recipes is a lot like reading a story. That’s so accurate and well said. As always, thank you for these interviews and your podcast series, Steve. I loved her cookbook for my first 2 years of keto. My husband and I used to share her skillet cookie. It was fantastic. And then I became unable to digest erythritol and Allulose . It wasn’t worth sitting in the toilet for two weeks. Now when I see the small cast iron skillet, I stare at it sadly. So I gave the cookbook away to somebody who could use it. I wish she would try at least one recipe with Stevia drops! Someone sent me a roasted tomato soup recipe. We are going to have it tonight. I’m glad she talks about dairy substitutions. My taste test says it’s pretty good

Carolyn Ketchum is amazing. She is the only reason I'm still on keto. I started about 5 years ago and if I couldn't make a keto version of my favorite desserts that taste as good as the non-keto version, I would cheat all the time. Thanks to her, I don't want to cheat at all. I have her cookbooks and oddly I was listening to this while making her pumpkin bread. Thanks for having her on your channel.
I use her recipes for Thanksgiving Desserts for the last 4 years. She's my favorite, her creations are the the best. I try many, and always return to her book.
