Hello! Today we are cooking tasty energy snack, nut bars)))) They will be a great snack in the middle of the day!
INGREDIENTS:
450g raw almonds
50g pumpkin seeds
50g sunflower seeds
50g dried cranberries
20g unsweetened coconut flakes
For syrup:
120g honey
80g maple syrup
1/4 tsp sea salt
COOKING METHOD:
1. Line a baking dish (8*8 inch) with parchment and brush with a little oil. (I have coconut)
2. Roast almonds at 350F/180C for 10 minutes. Roast pumpkin seeds and sunflower seeds at 350F/180C for 5 minutes.
3. Place roasted almonds, roasted pumpkin and sunflower seeds, dried cranberries, and unsweetened coconut flakes into a bowl. Mix.
4. Pour honey and maple syrup into a saucepan, add salt. Bring to a boil and simmer for 1-2 minutes.
5. Pour the syrup into the nut and seed mix. Stir quickly.
6. Put the mix in a mold and smooth it out quickly (any glass or roller will do). Leave it for 1 hour.
7. Cut into portioned bars.
everything needs to be done very quickly because the syrup hardens quickly!

Yes! Me too. Thinking of substitutions and swaps, depending on who will be eating them…. I love craisins but my hubs does not, maybe use organic dates instead 🤔

I tried these twice and both times it didn’t set to form firm bars. The nuts keep dropping off and the bar falling apart. Wonder what went wrong? Tasted great though.

I think you need to heat the sugars to a hard ball stage

if you are taking honey specifically as a health tonic, then no, you would not cook it or heat it excessively. Adding it to a recipe is a different matter altogether. Honey acts as a wonderful sweetener that won’t affect the body the same as processed sugar or corn syrup would. It is also very sticky so is helpful in this particular recipe. Everyone can make up their own mind what is important in each situation. If you don’t wish to eat heated honey, you can simply use another recipe. Easy Peasy 😊
